Hanging-ear coffee is the first step for many coffee rookies to enter the world of individual coffee! There are no complex tools, and you don't have to be as "careful" when brewing. With a bag of ears, a pot of hot water and a cup, you can easily get a cup of coffee with elegant aroma and mellow taste.

What is a hanging-ear coffee bag?

The design concept of the hanging-ear coffee bag comes from the lanyard tea bag, whose real name is "a cup of extracted coffee". But coffee powder cannot be directly soaked in water like a tea bag, so the inventors tried to simulate the filter cup to filter the coffee, hanging the non-woven filter bag containing the coffee powder in the center of the cup.

After continuous research, two expandable pieces of paper are added on both sides of the filter bag, and the filter bag can be suspended in the center of the cup after being pulled open. Because it is stuck on both sides of the cup like small ears, people affectionately call it "hanging-ear coffee".

Those wrong ways of making hanging-ear coffee

Mistake 1: when instant coffee is brewed

Hanging ear coffee is not instant coffee, hanging ear coffee is not instant coffee! Instant coffee is made into powder from the extracted coffee liquid by drying technology, so that hot water can be poured in and a cup of coffee can be reduced.

Qianjie is making hanging-ear coffee bags by grinding fresh coffee beans directly into medium-fine coffee powder, of which only 30% of the flavor is soluble in water, and the remaining 70% is water-insoluble wood fiber (that is, coffee grounds). So if you open the earbag and pour the coffee powder into the cup to brew, you will not only get a cup of black coffee, but also get a mouthful of coffee dregs.

Error 2: direct immersion

Hanging-ear coffee is not a tea bag, it can not be directly soaked in water to produce coffee liquid! Because the coffee powder used to make hanging-ear coffee bags has a fine grinding degree, the weight of each bag is about 10 grams. When the coffee is hung in the cup, the coffee powder will accumulate in the center of the filter bag, forming a thicker powder layer.

At this time, instead of tearing off the seal and injecting water into the center of the coffee powder layer, the coffee powder layer is directly soaked on the surface of the filter bag. The central position of the coffee powder layer cannot be wetted / or it takes a long time to soak to wet. Then the coffee powder close to the filter bag will release the woody flavor after releasing the flavor. Since not all coffee powders are involved in the whole extraction process, we end up with coffee water that is both tasteless, woody and paper-flavored (hot water is also soaked in ear-hanging paper brackets).

Mistake 3: inject too much water at once

There are many friends who pour water directly with a kettle when making coffee bags with hanging ears.

Error 4: the container for hanging-ear coffee is too small / too short

The correct way of making hanging-ear coffee

Correct one: choose a higher brewing container

Try to choose a higher cup / pot for brewing to ensure that there is a certain distance between the coffee bag and the extracted coffee liquid.

Correct 2: the water temperature of brewing hanging-ear coffee should not exceed 92 ℃ and should not be lower than 88 ℃.

The soluble flavor molecules in the medium-fine ground coffee powder need a suitable temperature to be better released. The front street recommends that light roasted (floral / berry / citrus) hanging ear coffee bags should be brewed at a water temperature of 90 ℃-92 ℃; medium roasted (nutty / cocoa mixed) hanging ear coffee should be brewed in 89 ℃-90 ℃ water; medium and deep roasted (herbaceous / spicy / dark chocolate) hanging ear coffee should be brewed in 88 ℃-89 ℃ water.

Correct three: a small amount of hot water is injected many times.

At this time, if there is a small coffee kettle is the best, because it can control the flow of water into the coffee powder, to ensure that the coffee powder can be evenly moistened and extracted. It doesn't matter if you don't have it, inject a small amount of water many times, and don't fill the filter bag all at once.

Correct four: the proportion of hanging-ear coffee brewing is 1:15.

Qianjie recommends that the brewing ratio of hanging-ear coffee bags is 1:15. For example, if a bag of hanging-ear coffee in front of the street is brewed in the proportion of 10 g ·L ~ (- 1) 15%, 150 g of hot water should be injected.
