Located in the Caldas producing area in central Colombia, with plenty of sunshine all year round and an average temperature of 22 degrees, San Jose Manor is suitable for growing coffee. San Jose Manor has a history of 100 years and has a total of 18 hectares.
The delicate rum treatment of this coffee was made by the hostess of San Jose Manor on a whim. First, the excellent coffee fruit was screened, then peeled and put into aged oak barrels for low-temperature fermentation. After fermentation for a long time, it was washed and finally dried and packaged.
The coffee bean variety it uses is Castillo, a coffee variety jointly developed by the Colombian Coffee producers Association and the Colombian National Coffee Research Center. It has a very strong resistance to leaf rust. Because of the popularity of the country and the outbreak of leaf rust, Castillo now accounts for 40% of the coffee beans grown in Colombia.
We use V60 filter cup for cooking, the water temperature is 90 degrees, the ratio of water to powder is 1:15, and the grindness is 80% of the pass rate of Chinese standard No. 20 sieve. The flavor is embodied in the imported wine chocolate, rum, tropical fruit flavor, the sweetness of maple syrup and the creamy taste. The overall balance is smooth.
