Why You Can't Make Cappuccino with a Siphon Coffee Maker

A siphon coffee maker can't make cappuccino due to its inability to produce concentrated espresso or create stable milk foam.

You’ve seen a beautiful cappuccino with that perfect creamy top—but have you ever wondered why you can’t just brew it with a siphon coffee maker? Despite its dramatic visual appeal and elegant brewing process, the siphon pot simply doesn’t deliver the right kind of coffee for a proper cappuccino. If you’ve tried (or wanted to try) making a cappuccino using a siphon, you may have noticed it just doesn’t taste or feel right. Here’s why.

The short answer is: a siphon coffee maker can’t make cappuccino because it brews a light-bodied black coffee, not the thick, concentrated espresso needed for the drink. Unlike an espresso machine—which extracts under high pressure in 25–30 seconds—a siphon produces a lighter, cleaner cup without the necessary body or crema to support steamed milk and foam. Also, siphons lack any way to steam or texture milk. For a true cappuccino, you need both espresso and properly textured milk foam, neither of which a siphon provides.

What Is a Cappuccino, Really?

Cappuccino is a classic espresso-based drink originating in Italy. The name comes from the Capuchin monks, whose brown hooded robes inspired the drink’s appearance: a shot of espresso with a layer of steamed milk and a thick cap of foam, creating a colour resembling the monks’ attire. The coffee itself is made by extracting a small, highly concentrated shot of espresso—usually using around 20g of coffee to 35g–40g of espresso—and then combining it with around 150ml of freshly steamed milk with a minimum 1.5cm layer of microfoam on top.

Why Siphon Coffee Doesn’t Work for Cappuccino

Siphon coffee makers, also called vacuum brewers, use a two-chamber system where vapor pressure forces water up into the upper chamber to brew with ground coffee, then returns it through a filter as brewing finishes. This method produces a clean, aromatic, and relatively light-bodied black coffee. However, it has major limitations for cappuccino:

  • It cannot produce espresso—the key thick, concentrated coffee base with crema.
  • It lacks steam wands or heating elements to texture milk into foam.
  • The resulting brew is thinner and lacks the body needed to balance milk.

Even if you pour cold milk into a siphon-brewed coffee, you’ll end up with a lukewarm black coffee drink—not a velvety cappuccino. The coffee lacks the intensity and texture that define the real thing.

How FrontStreet Recommends Brewing a Siphon Coffee Drink Instead

If you really want to use your siphon, FrontStreet Coffee suggests using a darker roasted coffee bean and enjoying it as a black coffee or lightly diluted milk drink. Their recommended beans include:

  • PWN Golden Mandheling – a balanced Indonesian bean with sweet, nutty depth.
  • Huila – a Colombian single origin with bright acidity and chocolate notes.
  • Brazil Queen Manor – a smooth, low-acid Brazilian option great for milk blending.

To mimic a latte-like experience, FrontStreet suggests brewing a strong siphon concentrate and adding milk to taste. But again, this won’t replicate the true cappuccino experience. For that, you need an espresso machine.

How a Proper Cappuccino Is Made (The FrontStreet Way)

At FrontStreet Coffee, a standard cappuccino is served in a 180ml tulip-shaped cup. This shape highlights the milk foam “cap” and supports the layered structure. Here’s how they build one:

Espresso Extraction

They use their in-house Sunflower Sunshine Blend—a custom blend of sherry-aged and natural Yirgacheffe beans—for espresso. The recipe is either:

  • 20g coffee → 35g espresso in 27 seconds, or
  • 12g coffee → 30g espresso in 23 seconds

Milk Choice & Preparation

Only chilled fresh whole milk is used. It preserves more proteins and fats—key to forming stable microfoam. The proteins stabilise the foam; the fat adds smoothness and slows foam collapse.

Milk Frothing Technique

Using a small steam pitcher, pour in 150ml of cold milk. Before turning on the steam wand:

  • Purge it to release condensed water.
  • Submerge the tip 1cm below the milk surface.
  • Turn on the steam and listen for a hissing “stretching” sound—that’s air being pulled into the milk to form foam.
  • Continue for 6–7 seconds until the foam reaches about 1.5cm thick.
  • Tilt the pitcher 45° and create a whirlpool to break up large bubbles.
  • Heat until the milk reaches around 55°C.

Pouring the Cappuccino

Before pouring:

  • Tap the pitcher to settle foam and swirl to mix layers.

Then:

  • Start pouring from the centre with the milk just touching the surface—let the foam rise on its own.
  • First let the foam sit, then gently pour milk underneath to lift the foam on top, creating that signature cappuccino “hat.”

The goal is to preserve the espresso’s crema while floating a thick, creamy foam on top. That’s why you don’t pour milk directly through the espresso first—you protect the crema with the foam.

Recommended FrontStreet Beans for Siphon Coffee

For siphon brewing, FrontStreet recommends darker roasted beans that produce body and sweetness without needing milk. Try PWN Golden Mandheling for its rich, nutty profile with hints of dark chocolate; Huila for balanced brightness and cocoa notes; or Brazil Queen Manor for a smooth, low-acid cup ideal for enjoying straight or with a splash of milk. These beans highlight the clarity and aroma that siphon brewing is known for.
