Lake Tawa is located in the Gayo mountains north of Aceh province in Sumatra, straddling Indonesia on both sides of the equator, with hot and humid rainforest climate rich in rainfall and fertile volcanic soil. The cultivation of coffee had a unique advantage, but it was not planted until 1924 because of its remote location and inconvenient transportation. Previously, Maoye's highly acclaimed Axie Gold and Lubao Chen Man both belong to the Tawa Lake producing area, so it can be seen that this producing area only produces high-quality Manning. Traditionally, we call all the coffee beans produced in Sumatra Mantenin, but this is not professional. In fact, the real mantenin is produced in the Lindong Mountains around Lake Toba in north-central Sumatra, 9-1200 meters above sea level in the southwest, with Batak as the main output. After all, there are different coffee beans in the two Great Lakes regions, Lake Toba and Lake Tawa.
At present, most of the Tawa Lake coffee that Maoye has seen is treated by wet planing, and the raw beans of TP are selected three times by hand. TP is the abbreviation of Triple Pick, which means picking beans by hand three times, which is also one of the guarantees of the quality of this producing area. The wet ploughing method is the crystallization of the wisdom of the Sumatran people. Because Sumatra is geographically located on both sides of the equator and belongs to a tropical rain forest climate, with high temperature, humidity and abundant rainfall, coffee farmers are often located in quite primitive mountains, with precious water resources and insufficient hardware. Local coffee farmers have developed a stage-by-stage drying method in order to adapt to such a high humidity environment. First of all, after the beans are picked by coffee farmers, they will first remove the peel and pulp in the producing area, simply wash, wet pods after 10-12 hours of fermentation, and then manually remove pectin, floating matter, etc., after one or two days of exposure, although the moisture content of raw beans is still 30%-50%, that is, peeling off the seed shell before continuing drying, in order to shorten the drying process of raw beans. After about 2 days of drying, the moisture content of raw coffee beans can be reduced to 1213%, then packed in gunny bags and stored in a cool and dry warehouse. After receiving the order, the raw beans are green and full, glittering and translucent, just like an emerald, so the coffee in this producing area is also called emerald Mantenin.
