This Yega Sheffield Cooperative from Ethiopia's Kocher region uses Ethiopia's traditional sun treatment to grow at an altitude of more than 1850 meters, so the acidity is very delicate and the sweetness is very good. Although the official label is G3 grade, the actual raw beans are almost G1 level. The cooked beans baked are full and beautiful, unlike other sun-dried beans. This raw bean was first discovered in the process of mass selection of microbatches by Dutch trader Trabocca, which came from the washing of the processing plant of Riko. It has a unique peach/mango/stone fruit flavor... Perfect for sun treatment potential! This batch is the joint efforts of Like Processing Plant and nearly 1,000 farmers around, and the Red Cherry Project tutored and encouraged the processing plant to improve its quality. Due to the selection of many samples from the Red Cherry Project, it scored a high score of 93 points on the famous cup test website Coffee Review.
The Lyco plant was established in 2011 in the Kochere region of Yegashefi, at an altitude of approximately 1850-2100 m. During the growing season from the end of October to mid-January, 850 small coffee farmers nearby deliver the harvested coffee berries to the lico plant. Once received, the berries are placed on a shelf in the sun for 15 to 20 days, waiting for the humidity of the green coffee beans to drop to about 12%, and then stored in the warehouse until they are ready for export.
Operation Cherry Red:
Operation Cherry Red (OCR) is a small-scale farm quality improvement project initiated by Dutch trading company Trabocca BV to improve coffee production capacity and quality in remote areas of Ethiopia by providing producer expertise and related technology assistance, partly funded by the Dutch government, since 2005. It is mainly aimed at the selection of small coffee cooperatives at high altitude in the three regions of Yegashefi, Lim and Sidamo, encouraging and assisting producers to improve washing, semi-washing, sun or other experimental treatment methods to improve the quality of coffee, and through professional cup testers stationed in coffee producing areas, the most direct grasp of coffee flavor to ensure the quality of each batch of output. Before the harvest season, Trabocca invites selected smallholder production organizations/producers to participate in the production of micro-batches of coffee (about 1500-3000KG), carefully selected by hand 100% mature red coffee cherries, hence the name Red Cherry Project.
In addition, Trabocca provides financial support, new hardware and production know-how to assist coffee farmers, promising a premium price if the quality of the actual output meets the standards of the cup test in Addis Ababa, Ethiopia and Amsterdam, the Netherlands. This year, Trabocca set a passing standard of 88 points. Red Cherry beans are packaged in GrainPro bags or vacuum boxed bags immediately after processing at origin and shipped to Djibouti for shipment.
