Jamaica Blue Mountain Coffee has a well-balanced taste of sweet, sour and bitter. It has always been the "number one" of boutique coffee, and many coffee glutton are its fans, including Qianjie Coffee. Today, in front of the street, we will talk about the "king" of boutique coffee, Jamaican Blue Mountain Coffee.
How many kinds of Jamaican Blue Mountain Coffee?
Blue Mountain Coffee comes from the Blue Mountain region of eastern Jamaica. The towering mountains bring a unique microclimate, which is very beneficial to the growth of crops such as coffee and bananas. The climate of the Blue Mountains is mild all the year round, and there will be clouds in the air, which keeps the coffee trees from being exposed to the sun for a long time. There are two concentrated rainy seasons every year, May-June and September-November, which bring abundant precipitation, and the slope of the hillside is well drained, so no additional irrigation is needed.
According to the standards listed by the Jamaican Coffee Industry Council CIB, only Arabica coffee produced above 910m can be called Jamaican blue mountain coffee beans, and the coffee produced in other regions is called Jamaican alpine coffee and Jamaican preferred coffee. The higher the altitude, the more difficult it is to manage and harvest, so the rarer the coffee beans are produced, and correspondingly, the higher the price.
Among them, Jamaica Blue Mountain Coffee will also be graded according to the specification, defect rate and cup flavor of raw beans. Blue Mountain Coffee is divided into four grades: NO.1, NO.2, NO.3 and hand-selected PB. The Blue Mountain Coffee bought in front of the street is the highest grade Blue Mountain NO.1, that is, Blue Mountain No.1 Coffee.
Top Jamaican Blue Mountain No.1 Coffee
In order to ensure the high quality of Blue Mountain Coffee, all exported raw coffee beans need to pass the quality test of the Ministry of Agriculture of Jamaica. Taking 300 grams of raw bean samples, 96% of the coffee beans meet the specifications of 17 to 18 mesh, the defect rate is less than 2%, the moisture content is about 13%, and the cup test flavor is sour, sweet, bitter, mellow, fragrant and other flavor characteristics, is the top blue mountain coffee in Jamaica.
The high-quality raw beans of Blue Mountain Coffee will be packed and transported in hand-made buckets, which are divided into three specifications: 70kg, 30kg and 15kg. Other Jamaican coffee beans are packed in the usual gunny bags. Over time, the barrel can be said to be one of the signs to identify authentic Blue Mountain coffee. Take the Blue Mountain barrel displayed at the street store as an example, you can see the logo printed with Jamaican Blue Mountain Coffee, the name of the manor, the barrel and the net weight of the coffee. In addition, the Blue Mountain No. 1 coffee on the front street comes from Clifton Manor, a member of the Tropical Rainforest Alliance, so the barrel has an eye-catching rainforest water frog logo.
The flavor of blue mountain coffee treated with water is cleaner.
Clifton Manor has mainly used water washing method to treat blue mountain raw beans for many years, and the coffee fruits of inconsistent quality have been removed from many links of water washing, so that the overall defect rate is greatly reduced.
After the coffee fruit is harvested, the coffee cherry is compacted by machine force, the peel and pulp are removed, and then placed in the pool to ferment overnight. Then put the fermented beans into a clean pool and wash them back and forth, using the friction of the beans and the power of running water to wash the coffee beans until smooth and clean. Finally, the shell beans will be dried for 2-3 weeks until the water content reaches 12-14%. Since the pulp and mucous membrane of the coffee have been removed before drying, there is no excessive fermented acid effect, making the aroma of the blue mountain bean itself more balanced and clean.
