Incht Manor specially produces the "Best Incht" series, selecting a small number of batches and coffee varieties with the best quality in the manor. Experienced farmers carefully select ripe coffee fruits, and then let the cup tester eliminate batches that are not up to the standard. Under such strict screening criteria, the Pacamara varieties in Incht Manor only account for about 8% of the total output.
All of Guatemala is made up of mountains and plateaus. There are Kuchu Matanes Mountains in the west, Madre Mountains in the south, volcanic belts in the west and south, with more than 30 volcanoes. Tahumurco volcano is 4211 meters above sea level, which is the highest peak in Central America. Earthquakes are frequent. There are Petten lowlands in the north. There are narrow coastal plains on the Pacific coast. The major cities are mostly distributed in the intermountain basins in the south. The lowland plain in the north is a tropical rain forest, and the volcanoes in the central highlands can reach 4200 meters.
The extremely high content of pumice (pumice) in the soil of Antigua (from the active Fuaigo volcano Fuego) keeps the humidity stable at 65% all the year round, which is very different from other volcanic coffee producing areas, where the humidity usually varies greatly between the dry and wet seasons.
Incht Manor pays special attention to the protection of the ecological environment and the technology of organic planting. The manor is subdivided into different small areas, each of which will select suitable varieties according to soil conditions. Chemical analysis of soil and coffee leaves is done every year in order to provide the right way of fertilization without the use of chemicals such as pesticides and fungicides. There is a very strong evidence of this: rainbow trout is also raised on the manor, and there can be no pollution in the waters where trout grow. Such strict quality control ensures the quality of raw coffee beans, and under the efforts of Aguirre, Incht Manor has also been recognized by the Rainforest Alliance Certification (Rainforest Alliance).
