Black honey: hardly remove pectin; dry for the longest time, lasting at least 2 weeks, with a cover to avoid too strong sunlight, prevent drying too fast, and make sugar conversion more fully.
Why does it cause different degrees of "honey"? First of all, we have to recall that after the coffee cherry is picked, the pulp will be removed before the coffee seeds inside can be obtained. after drying and shelling, the coffee is raw beans. In the process of removing the pulp, the water washing method does not retain the pulp, it is dried after the fermentation water is washed, and the raw coffee beans are peeled after drying. On the other hand, the honey treatment retains part of the pulp for drying. In the drying process, due to the different amount of pulp retained, the color is different. The more the pulp is retained, the darker the color is. Generally speaking, yellow honey treatment retains 30-40% pulp, red honey treatment retains 50-60% flesh, and black honey treatment retains 70-80% flesh. What if there's more?
