Ethiopia Ethiopia

Population: 93877000

Ethiopia's appellation is the most recognizable in the coffee world, and is currently the country with the most appellation as coffee. Today, the future is predictable. In addition, the Arabica gene potential of the original species and wild species will also be a major advantage for Ethiopian coffee.

SIDAMO

Shidamo and two other regions, Hara and Yegashev, registered trademarks in 2004 with the approval of the Ethiopian government, increasing the recognition of the region's reputation and the distinctive characteristics of the local coffee beans. Sidamo uses a combination of washing and sun treatment to gain popularity among consumers who like fruit and strong aromas. After Italy withdrew from Ethiopia in 1942, the area was known locally as Sidama. Sidamo or Sidama is the generic term for coffee beans from this region. The area is also home to some of Ethiopia's high-quality coffee beans.

HARRAR

This area is surrounded by small towns around Harrah and is the oldest production area. The coffee in this area is very special and is not in an environment that requires additional irrigation. Harrah's reputation has long been high, although the sun treatment can modify the original cloudy, woody, earthy taste to a bright blueberry flavor. Coffee beans are so special and memorable that those who have worked in the coffee industry have been opened to the variety of flavors of beans.

Altitude: 1500-2100m

Harvest: November-February

Breed: Heirloom

Ethiopia has eight major production areas: Ekempti, Limu, Illubabor, Djimma, Harrar, Teppi/Bebeka, Sidamo and Yirgacheffe. Yirgacheffe is located in the Gedeo region of southern Ethiopia, which is better known as Yirgacheffe and Kochere. Yirgacheffe coffee is unique in flavor, style and popularity, so it is unique in product classification and has always occupied a place in the global fine coffee market. Yirgacheffe, located in Sidama province, is itself a small town, adjacent to three small producing areas Wenago, Kochere and Gelena Abaya, and Kochere is also drawn into the regional classification of Yirgacheffe because the coffee flavor is almost the same as that of Yirgacheffe. Ethiopia implemented a new trading and grading system in November 2009, establishing the Commodity Exchange (ECX), through which coffee and other agricultural products are publicly auctioned. In addition to Yejia Shefei, Wenago, Kochere and Genlena Abaya are newly added. It can be seen that the flavor of these three producing areas is extremely detailed and can be subdivided.

coffee flavor

"The palate is rich, dense and delicate, with notes of fresh fruit, lime, raisins, raspberries and lemon juice."

Kocher is located in the southwest of Yegashefi town, near the small village of Chelektu in Gedeo district. Although this coffee is also "typical" Yegashefi, the Yegashefi coffee in each small producing area still has its own special flavor. Adado district has stone fruit flavor;Konga district has citrus and stone fruit flavor; Kocher is like a rich fruit tea with citrus and stone fruit flavours, and if sun-cured, coffee has dried cherry and cranberry flavours and a touch of lemon juice acidity.

One of the advantages of Ethiopian coffee is that it is thoroughly mixed. According to statistics, there are 6,000 to 10,000 native coffee varieties in the Ethiopian plateau. This is where coffee originated. The results of cross-pollination and gene exchange are really amazing.
