I believe that many friends are actually quite strange to the producing area of "Bahia", but it is an unusual producing area, of which the most famous is Chapada Diamantina, which is located in the central plateau of Bahia state. the whole area is almost surrounded by dry climate, so it can be found that almost all the beans from this area have been exposed to the sun. This obscure producing area has begun to shine in recent years and has been highly praised in some international competitions, and the coffee planted by our protagonist "Cook Bill Manor" is one of the best.
I said this is a Brazilian "candy coffee". Dry aroma is a very sweet tropical fruit, melon and mango aroma, milk caramel plus chocolate flavor, it pops up immediately when many samples are tested together. The wet aroma is a more "stuffy" maple syrup with a touch of spice.
The performance of the cup is low acidity and soft taste, but the flavor is amazing! Ripe peaches, mangoes, melons, coconuts, apricots, and candy-like sweetness! --
Interestingly, I also found a spicy taste like brandy spirits. I tried to bake it in medium, when its acidity decreased much but became more "attractive". The taste of a sweet chocolate and baked hazelnuts and almonds. Amazing! -- I haven't met such a good "Brazilian sun bean" for a long time.
