Health Canada issued a notice on September 14 that it would update the list of licensed food enzymes to approve a mannanase for instant coffee.

It is understood that mannanase is a hemicellulase.

Previously, Canada has approved hemicellulase from Bacillus amyloliquefaciens and Bacillus subtilis for the production of instant coffee. The approved mannanase comes from Aspergillus Niger AE-HCM.

After a risk assessment, Health Canada concluded that there was no safety risk when the mannanase was used, so the list of approved food enzymes was updated to approve its use in instant coffee.
