□ This bean comes from a small batch of the Shangri-La estate in Vera/St. Augustine. It is hand-picked, fully ripe coffee cherries, steeped and fermented for 12 to 16 hours, then washed and removed by gravity. The drying part is to remove the peel and flesh of the shelled beans placed in Colombia in recent years gradually widely used 'parabolic drying bed'(similar to greenhouse) for slow sun drying, this method is bound to increase the drying schedule, but it can indeed reduce dew (or rain) or other external environmental interference, develop a more consistent flavor, but also improve the stability of raw bean quality.
