Introduction to the manor

Chateau San Isabel won COE in Guatemala in 2012 and won the championship in the local competition in the Koban Rainforest this year (2016). The estate is located in the Copan producing area of San Cristobal Verapaz, San Cristo, and is surrounded by majestic peaks, rainforests and beautiful floral vegetation. St. Isabel's estate has been growing coffee since 1875, when the president of Guatemala gave the estate to its present owner, the Valdes family. The estate attaches great importance to the operation of the environmental ecosystem, with about 100 hectares of reforested areas, planting plants such as pine and cypress that can help preserve water sources. In addition, the environment here has species diversity, and the peel of coffee fruit is also used as fertilizer for the soil, allowing species in the region to continue and give birth to more new life.

At St. Isabel Manor, the coffee fruit is mainly picked by local women to pick the ripe cherry berries. The peel and pulp mill has been able to save water more than in the past, and the water will also be recycled. Coffee is treated by partial fermentation and secondary infiltration to achieve more consistent quality, and the drying method is through the sun, greenhouse or Guardiola dryer.
