Yunnan small grain coffee belongs to Rubiaceae and belongs to Arabica. It is mainly cultivated in Lincang, Baoshan, Pu'er, Dehong, Nujiang, Xishuangbanna and other places in Yunnan.
The first coffee tree in Yunnan was introduced by a French missionary in 1892 and successfully planted in Binchuan County. Because of the small size of coffee fruit in Arabica, the coffee variety was recorded as small-grain coffee at that time. After the determination of plant genes, the earliest Yunnan small-grain coffee was iron card variety.
In today's Binchuan County, 20 coffee plants tested that year are still blooming and bearing fruit, becoming the ancestor of Yunnan coffee. At first, Yunnan coffee was not widely grown, until when China needed to repay Russian debt, the government began to encourage farmers to plant a large number of coffee trees, so during that time coffee began to be scattered to various regions of Yunnan.

But after the debt was repaid, because there was not much demand for coffee in the country, many farmers cut down coffee trees to grow other crops. But Yunnan has a very good environment for growing coffee trees, not only with suitable temperature and fertile soil, but also between the Tropic of Cancer (coffee gold planting belt for short), so Nestl é quickly took a fancy to Yunnan.
At the same time, Katim varieties with higher yield and better disease resistance and insect resistance were introduced, so in the following 20 years, coffee beans grown in Yunnan were mainly supplied to Nestle as coffee raw materials. therefore, when people mention Yunnan coffee, it is always associated with instant coffee.

However, with the love and pursuit of coffee in recent years, Yunnan coffee beans are no longer the raw material of instant coffee. Both planting and processing have been improved more scientifically, so Yunnan coffee is now gradually accepted by people in other countries and regions, and it is also one of the higher-grade coffee beans.
At present, among the Yunnan small-grain coffee beans sold in Qianjie Coffee, there are Katim varieties grown at an altitude of 1200m in Lujiangba area of Baoshan, as well as tin card varieties grown in Lincang 1300m by Qianjie itself.

The biggest difference between the two coffee beans is that the Katim coffee beans in Baoshan have a more obvious plum-like acidity, while the iron pickup beans grown in Qianjie Coffee have a cleaner taste and sweetness.

However, no matter which Yunnan small-grain coffee beans are roasted moderately in Qianjie coffee, they can show the unique flavor of Yunnan coffee producing areas: plums, nuts, caramel and tea taste ~ bitter taste are moderate, strong aroma.
The utensils and parameters used for brewing and brewing Qianjie coffee are as follows: filter cup: Hario V60; powder quantity 15 grams; water temperature 90 ℃; grindability: medium and fine grinding (Chinese standard 20 sieve pass rate 80%); powder-water ratio: 115; staged extraction.

Because the ribs of V60 filter cup are distributed in a curved shape from top to bottom, and the length is different, the exhaust is more smooth and the flow rate is faster during brewing, and it is precisely because of this that the extracted coffee flavor level will be more obvious.
Steam 30 grams of water for 30 seconds, water injection to 125 grams in the center of the small flow, continue water injection to 225 grams when the water level is about to be exposed to the powder bed, remove the filter cup when the water level is about to be exposed to the powder bed, and the extraction time is minutes.
Qianjie coffee Yunnan Tieka flavor performance: dry aroma with a hint of caramel and nuts, drink is a Brin-like main note, with brown sugar sweet has been slightly sour, with some black tea in the aftertaste. The overall flavor level is rich and the taste is clean.

Yunnan Baoshan all-red fruit sun Katim flavor performance: dry aroma with a hint of fermentation and roasted nuts taste, taste like plums, with roasted nuts and caramel sweet, with some fermented tea finish. The overall flavor is rich and the taste is solid.
