The Blue Batak in Indonesia's North Sumatra is from small farmers around Lintong Nihuta, an area on the south side of Lake Lake Toba, where coffee is picked and sent to the local wet treatment plant, which is then sent to the dry treatment plant in Medan. Due to the local high altitude (1400-1450 meters) and large temperature difference, the coffee has a rich and delicate flavor.
Most of the small farmers around Lintong Nihuta have 500 or fewer coffee trees, using the traditional Indonesian "wet peeling" or "semi-washing" method, or "Giling Basah" in the local language. The farmers here will pick the ripe red fruit manually, remove the pulp with the pulp removal machine, and remove the pectin after overnight fermentation. Then spread it in the sun to dry and reduce the moisture to about 30%. Then remove the sheepskin and dry the raw beans to about 13% moisture.
Generally speaking, such wet stripping treatment will bring unique flavor to coffee, such as earth, herbs, spices and thick feeling. On the contrary, this batch shows the flavor of flower and citrus, and has a rich sense of sweetness.
