About Panama Hartmann Estate Black Winey

Hartmann Estate is owned by the Hartmann family. Mr. Aloys Hartman (Louis Hartmann) was born in Czechoslovakia in 1891 and gave up his boy at the beginning of World War I. Thanks to his mother, he could hide on a ship that took him to Pennsylvania. At the age of 20, he traveled with friends until he came to Panama in 1911. He decided to settle in Chiriki province, especially in Kendra, where he built his first cabin in the primeval forest in 1912.

Today, the third generation of the Hartman family, represented by Mr. Ratibor Hartmann, is running the business. Raibor Hartmann is one of five siblings who manage the farm. Each brother and sister is responsible for the specific operation of the farm. There is a warm family atmosphere in this manor, and everything seems to be taking care of itself. You could say that this family lives together all their lives.

This is one of the three lots we have launched from Hartmann Estate this year, and this is the "Black Winey" lot. The process of black wine is similar to the natural process that we are all familiar with. Ripe cherries are selected, sorted and sent to dry. This Winey coffee is sun-dried or on an elevated bed to produce more airflow during the drying process, as the cherries still on the beans provide a chance of damage. This process provides coffee with a fuller body, some wine flavor, sweeter shape and lower acidity.
