About Panama Hartmann Estate Black Winey
Hartmann Estate is owned by the Hartmann family. Mr. Alois Hartman (Louis Hartman) was born in Czech Slovakia in 1891 and gave up the boy of that year at the beginning of World War I. Thanks to his mother, he was able to hide on a ship that took him to Pennsylvania, USA. At the age of 20, he traveled with friends until he arrived in Panama in 1911. He decided to settle in Chiriki province, especially in the Candela region, where he built his first cabin in 1912.
Today, the third generation of the Hartmann family, represented by Mr. Ratibor Hartmann, runs the business. Raibor Hartmann is one of five siblings who manage the farm. Each sibling is responsible for specific operations on the farm. There is a warm family atmosphere on this estate and everything seems to be working itself out. You could say the family lived together their whole lives.
This is one of three lots we're launching this year from Hartmann Estate, and this is the "Black Winey" lot. The black wine process is similar to natural processes we are all familiar with. The ripe cherries are picked, sorted and sent to drying. This Winey coffee is dried or placed on an elevated bed to create more airflow during drying, as the cherries still on the beans provide an opportunity for spoilage. This process gives coffee a fuller body, some wine flavor, a sweeter appearance, and less acidity.

Panama borders Colombia and Costa Rica. Panama's coffee-producing regions are located in one of the least active volcanoes in Central America, namely Volcan Baru, Boquete, Volcan and Renacimiento. Panama has a very unique microclimate, the surrounding land is full of rich nutrients and fertile soil, making these highlands perfect conditions for growing and harvesting special coffee varieties.
Small farms in the Boquete region, which do produce coffee cherries that are distinctive, employ the local Ngbe Indians during harvest season, and are employed at the most reasonable wage levels in accordance with Central American labor laws.
