Kotowa has four coffee estates: Finca Kotowa Duncan, Finca Kotowa Don K, Finca Kotowa RIO CRISTAL and Finca Kotowa tradicional. The two most famous estates are Duncan and Don K. Duncan Manor is located at an altitude of about 1650-1750 meters, on the west side of Boquete, next to Baru volcano. It is cool and frost-free at night and dry and sunny during the day. It is deeply affected by the micro-climate of the intersection of Pacific and Atlantic air currents. The rainfall during the growing period is abundant, and the dry and wet rainy season is distinct. In addition, the lava in the volcanic belt contains rich minerals. The fertile volcanic black nutrients are sufficient, and the drainage is quite good. The terroir conditions are unique.
In terms of Arabica characteristics, coffee quality usually increases at higher altitudes because higher altitudes cause average temperatures to drop. Although the quality increases, the coffee harvest will decrease. The key altitude is 1200 meters. The quality of coffee is increasing as the temperature decreases, but the low temperature should not be lower than 12 ° C and the high temperature should not be higher than 30 ° C. A greenhouse coffee tree nursery was designed at 1800 meters. Four different microclimates were used to test the effect of temperature on coffee flavor under different heights and rainfall patterns. Panama Kotowa Duncan Organic is the coffee we have re-served several times in the past.
Kotova Farm's third generation farm has several excellent plots of land. Duncan-grown areas are organically maintained and certified, and this runs through the entire processing process. We were delighted to visit Kotowa's farm, their old wet mill and their wonderful home overlooking the beautiful Boquete Hillside and Baru Volcano. Ricardo Cona also owns coffee shops in Panama City and elsewhere in Panama, so much of Cotova production is used domestically, reducing the amount available for export. In 2016 Cafe Kotowa was awarded the third edition of the Panama Cup Best Producer, a trophy that recognizes the producer's coffee in the final round of each category in the Panama Best competition.
