Panama borders Colombia and Costa Rica. Panama's coffee-producing areas are located in Volcan Baru,Boquete,Volcan and Renacimiento, one of the most inactive volcanoes in Central America. Panama has a very unique microclimate, and the surrounding land is full of rich nutrients and fertile soil, making these highlands perfect conditions for growing and harvesting all kinds of special coffee.
Located in the Finca Hartmann á n Bar ú in Panama, Hartman Manor has a unique microclimate and fertile soil. Towering original trees become the best shade-growing environment, while shade-grown coffee grows more slowly, brewing higher sweetness and brighter acidity. Coupled with advanced cultivation technology and advanced raw bean processing methods, Hartman has become a top producer of the highest quality coffee.
Hartman Manor is a coffee farm family that has been operating since 1950. The Hartman family loves coffee and the original beautiful land heritage. It is a sustainable farm with rich wildlife (including more than 300 species of birds) and dense primeval rainforest. The total area of the manor is 120 hectares, of which only 20 hectares are used as planting land. Hartman Manor is adjacent to La Amistad International Park, which has been declared a World Heritage site for wildlife and tropical rain forests by UNESCO. Hartman believes they are an extension of La Amistad International Park, where they are leaving untouched 75 hectares of pristine cloud forest.
Hartmann Estate is owned by the Hartmann family. Mr. Aloys Hartman (Louis Hartman) was born in Czechoslovakia in 1891 and was abandoned as a young boy at the beginning of World War I. He first moved to Pennsylvania. At the age of 20, Mr. Hartman went to Panama and eventually decided to settle in Chiriki province, especially in Kendra, where he built a house in 1912 and started growing coffee!
Today, the third generation of the Hartmann family, represented by Mr. Ratibor Hartmann, continues to manage the estate with four of his brothers and sisters. Each brother and sister is responsible for the specific operation of the farm. There is a warm family atmosphere on the farm and everything seems to work out on its own. You could say that the family has lived together all their lives.
This "Winey" batch is one of the three process styles we ship from Hartmann Estate. The wine process is very ripe (slightly darker than usual when picking cherries) cherries are picked and sorted, while the fruit around beans is kept intact and sent dry on improved beds in Africa. These elevated beds allow greater airflow during drying to help eliminate the risk of overripening, fermentation and deterioration. The result is an incredibly fruit-driven and juicy coffee with slightly lower early acidity than washed or even honey from the farm. Ratibor's Winey is still one of our most popular coffees and we are happy to work with him again this year.

Hartmann Manor, Panama (wine in the sun) (Panama Hartmann Black Winey)
This Panamanian coffee bean is tanned with wine, blueberry, flower, sweet mango, peach and berry aromas. On the palate, you can feel the dark fruit aromas of blackberries, berries and black plums, followed by sweet aromas of strawberries, passion fruit and mango with strong wine aromas, solid and full palate.
Arabica coffee variety Kaddura (Caturra) is a mutant of Bourbon, which was first found in Brazil. The palate is sour with lemon or citrus flavors and fruity in sweetness. Kaddura's sweetness is determined by the number and dose of fertilizer applied by the grower, and the harvest period takes two years and the care cost is high, so the yield is still limited.
Arabica coffee variety Catuai is a cross between Kaddura (Caturra) and Mondonovo (Mundo novo). Kaddura's tree is short and Mondonovo's height is high, and it is easier to harvest after the hybrid. The taste is sweet and sweet, the sweetness performance is similar to Cattura, less sour, improve the taste is not good, poor flavor, good balance.
Treatment method (Coffee Processes)
It refers to the process of turning ripe red fruit into dried raw beans. each treatment method has its own advantages and disadvantages, and is affected by the natural environment and demand of the producing area, so each producing area has its own suitable treatment method. Also known as natural drying and non-washing treatment, the collected coffee fruit is dried in the sun and shelled, absorbing the taste of the peel and pulp in the process of exposure for a long time, making the sweetness and mellow thickness of the coffee fuller, easy to produce unique aroma.
This batch of raw beans is wine-scented sun treatment, in the process of raw beans, the fermentation method and degree is similar to the fermentation of red wine, the treatment procedure is similar to the sun treatment, but the fermentation time is longer.
