Guatemala Finca Santa Felisa of Santa Felisa Manor in Guatemala
In 1904, Mr.Trinidad E. Cruz founded Saint Felicia Manor in Acatenango, one of the well-known producing areas of Guardia. So far, the manor has entered the fourth generation of operation (currently by Anabella and Antonio Meneses. Brother and sister management). Arcatel Nanguo belongs to Chimaltenango province, Antigua (Antigua) to the east and Atitlan to the west. The coffee planting area surrounds the Arcatel Nanguo Valley (Acatenango Valley) with an average elevation of 1300-2300 and is surrounded by two volcanoes such as Volcan Acatenango and Volcan de Fuego. It can be expected that the whole coffee planting area is nourished by volcanic fertile soil. Saint Felicia is located at an altitude of 1500-1920m, with an annual precipitation of 1200-1500mm and an average temperature of 17.7-22.7C. Suitable micro-climatic conditions are more conducive to the slow ripening of coffee and absorb enough nutrients.
After years of operation, Santa Felisa's pursuit of coffee quality is also reflected in varieties, post-processing procedures of coffee and cherries, as well as concern for the entire planting environment and humanities. In the environment, avoid the use of man-made chemical pesticides, repeated afforestation to protect natural watersheds, pruning, weeding and removal of harvested fruit residues to avoid pests and diseases. In the form of organic fertilizer, such as using Elsinea Foetidia compost as fertilizer, coffee trees are planted and shade trees are planted at the same time, which is very helpful to protect the soil and prevent soil depletion. Humanities, never employing child labor, improving the living quality of farmers on the manor, setting up primary education institutions and day nurseries on farms to provide farmers with support for higher education, and even sparing no effort in the maintenance of Mayan culture, such as providing courses in Mayan handicrafts for female farm workers; promoting racial and cultural integration and maintaining the richness of Mayan culture in towns near the farm. The Mayans who work for the manor have even inherited this service from generation to generation.
More than 30 coffee varieties have been tested on the estate, and currently grown are Red Tibica, Red bourbon, Red Patch (Red Pache), Geisha, Red Kaddura, Red Pakamara and Huang Kadui. And continuous innovation and improvement in post-processing procedures to return market demand, so far the manor uses more than seven kinds of raw bean treatment, and the most popular ones in the market are water washing, Kenyan K72 water washing, orange honey treatment (Orange Honey), and tanning. Different treatments are used to create a more diverse flavor presentation. K72 is derived from Kenyan water washing treatment. Ripe cherries are harvested and fermented for up to 72 hours. Wash every 24 hours to avoid over-fermentation and then continue to ferment, the complicated process creates a continuous tail rhyme and clear acidity. Orange honey treatment creates mild acidity, complete mellowness and delicate sweetness.
In 2011, St. Felicia Manor began an independent bidding activity, and Shoucheng Coffee also participated in this year's bidding event, while going to the manor in person to select non-competitive lots with excellent flavor for introduction.
