Mantenin refers to the half-sun or sun-dried beans in the Lindong Mountain area (Lintong) around Lake Toba in north-central Sumatra, 9-1200 meters above sea level on the southwest coast.
Indonesia has a humid climate, so when it is dried for several hours to one day, the moisture content is reduced to 20-35%, and the pectin layer has not yet solidified, that is, it is acquired by the broker and brought back to the treatment plant to remove the pectin layer by machine, so as to prevent the pectin from excessive fermentation and sour smell.
