Omar Arango: Omar Arango is the owner of St. Louis's Manor. St. Louis Manor has a very long history. Before Omar took over management, the company adopted a business strategy of winning by quantity. As the past cultivation relied heavily on pesticides and agropharmaceuticals, and with the rising prices of related products, Omar realized that such costs could no longer be afford. He decided to change his business strategy and slowly shift to organic farming. In the process of practicing his ideal, he introduced a more systematic manor planting plan. First, replant part of the loess land, and plant different varieties such as Bourbon, Typica,Castillo, Tabi … Etc.). Then arrange the planting of block varieties by observing the difference of microclimate in the manor area. Because of the difference in elevation, ring and slope, the St. Louis Farm can be divided into low-temperature blocks. Coffee grown in low-temperature blocks generally has lower complexity and acid value, while hotter blocks have more productive capacity. In addition to the diversity of varieties, he has also tried more treatments in recent years. This time the pink bourbon is not only a special variety, but also adopts the traditional "washing" style, which is different from the traditional "washing" style, which is changed to aerobic fermentation. Such a "treatment" type, need to control more factors, but also need to pay attention to time, in order to avoid excessive fermentation. We are very happy that Omar has achieved very good results on Pink Bourbon this time, and we are also very happy to share this one with you. (source: Tri-up coffee)
