In 2010, the Holguin family and Camilo Merizalde decided to set up a farm to grow the most unique experimental coffee. Camilo Merizalde, a well-known estate owner who planted and experimented with fine coffee in Colombia, began to plant and develop his latest estate and named it Cloud Estate by virtue of his many years of experience in estate management variety selection and planting. At the beginning of the estate planting, Camilo chose several of the rarest coffee varieties in the world, such as Geisha and Laurina, to plant in Cloud Estate. In addition to these excellent traditional varieties, Camilo has introduced Sudan Rume (RS-510) from the Boma Plateau Valley in South Sudan.

In 2014, Australian barista Sasa Sestic began working with Camilo and the exciting Sudan Rume variety in the estate.

Sasa fell in love with this rare wild Sudanese hybrid that grows on Colombia soil. Inspired by Australia's own wine industry, Sasa had the idea of improving the acidity of Sudan Rume fermented at Camilo Estate by anaerobic fermentation and providing stable temperature treatment, making it brighter and cleaner than washing.

The experimental project was a success and Sasa won the title of World Barista Champion in 2015.

In terms of genealogy analysis, it belongs to an earlier variety than Typica and Bourbon series. Because this variety is mostly cultivated in Sudan and Ethiopia, its rich gene pool has attracted scholars to study its own disease resistance genes for many years. However, due to its small yield compared with other varieties, it has not been popularized in various coffee-producing countries for many years. Compared with the traditional Geisha flavor, it has a rare but rich typical toffee milk sugar flavor, while it has a thicker body scale.

About

The farm is located in the coffee-producing region of Colombia: Cauca. Because it is at the highest point of the region, conducive to the growth of coffee plants and overlooking the beautiful city of Cali. These coffee trees are grown in areas with fertile red soil, and irrigation systems have been established in most parts of the farm to provide all the resources needed to grow coffee trees.

Cloud Manor carefully selected batches of geisha honey treatment, each bean before picking to ensure that the fruit has reached 18-22% saccharification, and use African shed bed drying. During the early drying period, the coffee fruits are stirred every four hours, and the fan blows to ensure that the coffee fruits are dried evenly and stably, thus ensuring their high quality and good flavor.
