For example, only ripe cherries with 21 sugar content (Brix 21) are harvested.
And develop water washing, honey treatment, solarization and Kenyan 72-hour fermentation washing treatment, which is rare in Central America.
It is widely talked about by the coffee industry. Kenyan 72-hour fermentation water washing treatment
It originated in Kenya and adopted the cyclic repetitive treatment method of washing after fermentation, which was made after the same day of harvest.
Select the best cherries for peeling and fermentation. The fermentation time is 24 hours. Wash them with clean river water after 24 hours.
Then, it was fermented again with clean river water for 24 hours, then washed, and repeated for 3 times.
Up to 72 hours, so it is called Kenyan 72-hour fermentation water washing treatment, referred to as K72.
In addition to friendly planting, Santa Ferrisa Manor also attaches great importance to and supports the balanced development of the local community.
The manor does not use child labor, and there is a primary school in the manor, and education subsidies for the next generation to high school are provided to partners working in the manor.
