Costa Rica Stone washing Factory La Roca
Costa Rica is a very unique coffee producer, and many microprocessing plants can collect micro-batches and different varieties of coffee directly from the surrounding area for processing. The La Roca washing plant is run by the Uma ñ a family, which harvests and produces coffee for the third year. Members of the Uma ñ a family are Ricardo and his wife Margarita, and four adult children, Juan Carlos, Felix, Dario and Diana. The children are responsible for managing a 7.5-hectare farm with nearly 40000 coffee trees in La Quebrada. The farm is quite high above sea level, more than 1800 meters above sea level, providing ideal microclimatic conditions for coffee growth. The main varieties planted are catuai and Kaddura. During the harvest season, 13 harvesters will be employed and paid $3 for every 13 kilograms of cherries.
The Umana family has reached its fourth generation, and although it was convenient to send cherries to the Tarazu Cooperative (Copa Tarrazu), it was cut from the coffee production process. Their enthusiasm for coffee cultivation made them follow their father's footsteps into coffee production, set up their own washing plant La Roca, and were very proud of the quality of the coffee they had worked hard to produce. In Costa Rica, microprocessing honey factories are particularly suitable for different honey treatments, each with different flavors according to the amount of pectin left, from black honey, red honey, yellow honey, golden honey to white honey. Black honey usually refers to 100% retained pectin, which is directly fermented and dried; this is white honey, which retains only 10% pectin, does not shade and dries, making the final flavor more clean and balanced.
Uma ñ an also grows avocados and passion fruits, which are sold in the local market, but coffee production still accounts for 95 per cent of its income. In the future, they hope to plant more exotic varieties and try to improve the quality of coffee and find better disease-resistant varieties.
