First of all, I would like to give you a brief introduction to the country of Burundi (the following is sorted out according to my notes and web search).

Burundi, located in east-central Africa, is a small country with an area of only 27834 square kilometers.

The geographical location is bordered by Rwanda to the north, Tanzania to the east and south, Congo (Kinshasa) to the west, and Lake Tanganyika to the southwest.

Both Burundi and Rwanda are "countries with thousands of mountains". There are many mountains in the country, and the climate is cool and comfortable.

Because of the mountains, coffee trees are planted at a relatively high altitude, with an average of about 1400-2000 meters.

Burundi has won the title of "Heart of Africa" because its territory is shaped like a heart and its geographical location is close to the center of Africa.

But in fact, this country is not romantic at all.

Burundi has had several massacres in its history and is still one of the least developed countries in the world declared by the United Nations.

Let's talk about the coffee part--

The main coffee variety of Burundian coffee is bourbon, which is treated by washing, tanning and semi-washing.

The treatment of semi-washing is also due to the fact that some farmers in Burundi are too poor to send them to distant washing stations for treatment every time they pick fresh coffee beans, nor do they have the conditions to build their own pools for water treatment, so they can only purchase their own cheaper treatment equipment and treat them at home. This cheap device can only remove the peel and pulp of coffee beans, but there is no way to remove pectin, while this method, which only removes the skin and pulp and is wrapped in pectin for drying, is classified as a "semi-washing" method.

The main coffee producing areas in Burundi are KAYANZA and NGOZI, which are two adjacent producing areas located in the northern part of Burundi bordering Rwanda.

Burundian coffee is characterized by lower acidity, slightly stronger texture and lighter aftertaste than Kenya, but Huigan is also outstanding.

Usually the flavor of Burundian coffee is similar to that of flowers, citrus, sweetness of red berries and chocolate.

The coffee beans tested in this cup are beans from the COE Burundi ranking 1-23 in 2017, all of which are washed beans.

About COE

COE, the abbreviation of Cup of Excellence, is also called "Outstanding Cup" in Chinese. It was first held in Brazil in 1999. It is now the most famous and authoritative boutique coffee competition in the world.

COE is usually held once a year, when the growers of boutique coffee submit their best beans to domestic / international judges for cup testing and scoring. After 6 rounds, they are eliminated layer by layer, and a maximum of 40 best beans are selected for ranking and bidding. The purpose of the COE competition is to encourage coffee farmers to better cultivate and grow coffee, improve the quality of coffee beans, and help them benefit from bidding to form a virtuous circle.
