On a pilot basis in October 2016 in the Ca ñ asgordas region of Antioquia, Colombia, they jointly owned a factory and developed the project, which revolutionized the processing technology currently available to indigenous farmers and provided the country with many benefits for industry-wide sustainability. One of the biggest inefficiencies in coffee production is the fermentation and drying process, in which any number of variables at a given processing location will have a great impact on the final quality of the product. They have successfully applied controlled fermentation to coffee processing through inoculation techniques to deal with the application of bacteria and yeast. This enables us to identify and select beneficial yeasts and bacteria of specific strains to help with fermentation, monitor their activity, and ensure that counterproductive bacteria disappear from the process.
