In 2010, the Holguin family and CamiloMerizalde decided to build a farm to grow the most unique experimental coffee. CamiloMerizalde, a well-known manor owner who planted and experimented with boutique coffee in Colombia, in addition to the excellent San Tuareo Manor and Finca Inmaculate, based on his years of experience in manor management variety selection and planting, began to plant and develop his latest manor and named it Yunwu Manor. At the beginning of the manor planting, Camilo chose some of the rarest coffee varieties in the world, such as Geisha and Laurina, to grow in Yunwu Manor. In addition to these excellent traditional varieties, Camilo also introduces Sudan Rume varieties (or RS-510) from the Boma Plateau Valley of South Sudan.
In 2014, Australian barista Sasa Sestic began working with Camilo and the exciting Sudan Rume variety in the estate.
Sasa fell in love with this rare wild Sudanese hybrid that grows on Colombian soil. Inspired by Australia's own wine industry, Sasa had an idea to enhance the Sudan Rume fermented acid value flavor in Camilo Manor by anaerobic fermentation and providing a stable temperature treatment, making it brighter and cleaner than washing.
The experimental project was a great success, and Sasa won the title of world barista in 2015.
Sudan Rume belongs to an earlier variety than Typica and Bourbon in genealogical analysis. Because Sudan Rume is mostly planted in Sudan and Ethiopia, its rich gene pool has attracted scholars to study its own disease resistance genes for many years, but it is not popular in various coffee producing countries for many years because its yield is smaller than other varieties. Compared with the traditional common Geisha flavor, Sudan Rume has a relatively rare but rich typical toffee caramel flavor, but also has a thicker mellowness meter.
About Las Nubes
The farm is located in the Colombian coffee producing area: Cauca. Because at the highest point in the area, it is conducive to the growth of coffee plants and overlooking the beautiful city of Kali. These coffee trees are planted in areas with rich red soil, and irrigation systems are established in most parts of the farm to provide all the resources needed for coffee trees to grow.
Yunwu Manor strictly selects brothel honey treatment batches. Before picking each coffee bean, fully ensure that the saccharification of the fruit has reached 18-22%, and use African scaffolding to dry. In the initial stage of drying, the coffee fruit will be turned every four hours, with fan blowing to ensure the average and stable drying of the coffee fruit, thus ensuring its high quality and good flavor.
