In Pura Cepa, variables that are controlled for better coffee quality are temperature, time, pH and fungi.

Pura Cepa processes green coffee beans by controlling bacteria and yeasts through inoculation (vaccination) to achieve controlled fermentation. This allows us to identify and select specific beneficial yeast species and strains to aid fermentation, monitor their activity rates, and ensure that anti-productive bacteria are eliminated from the process.

PURA CEPA is an economical, natural, environmentally friendly and easy-to-operate treatment method. It uses some unique attributes of microorganisms and scientific monitoring to naturally and efficiently complete the fermentation process of coffee beans and convert wastes into usable substances.

The main goal: stable and controllable scientific fermentation process, to achieve a lower price to buy a cleaner and more stable origin flavor.

Vivitenango is a very special area in Guatemala production area. Generally, volcanic soil is the most common in Guatemala, but this area belongs to calcareous soil, which makes Vivitenango coffee faintly reveal a mineral-like smell; usually the highland of about 2000 meters is easy to frost at night, but the hot air flow from Mexico steadily enters Vivitenango, so that the coffee garden at high altitude here is not affected by frost.

Vivetnam fruit is recognized as one of the most beautiful growing areas, but this year many local producers experienced drought during the cherry ripening period, resulting in a branch with semi-ripe cherries that have begun to grow but have not developed into mature red. A severe lack of rain for about 100 days before the main harvest period began severely affected the growth of the entire Vivitenango coffee. For many farmers, the amount of fine grade coffee produced this year is 30 percent less than last year.

Edwin Martinez's "Farms of Beauty" is located in northern Guatemala at an altitude of 1.600 - 1.900 meters. Since 2007, The Coffee Collective has purchased coffee from Edwin, the first direct purchase of coffee farmers.

This batch was harvested from the original lot of Vista Hermosa Farm, manually harvested in February 2017, fermented in small tanks, washed and dried.

The Coffee Collective paid 127% more than the normal market price for this batch of coffee, light to medium roast, to achieve the best balance.
