CAFECO was founded in 1972, and the founder of the coffee industry in El Salvador dates back to the 1880s.
ATAPASCO, the main treatment plant of CAFECO, is one of the large-scale processing plants that take into account ecological conservation and equipment and technology progress in the country. At present, it has seven estates with a total planting area of more than 1700 hectares and exports nearly 25000 bags of coffee beans every year. St. Emilio is the most widely planted coffee estate under CAFECO, located in the Cordillera del Balsamo Mountains, about a 30-minute drive from San Salvador; the estate mainly grows bourbon coffee, with mellow and sweet taste as its main feature. There are a number of natural springs in St. Emily Australia and an independent coffee processing plant has been built. It is the first coffee farm in CAFECO to establish a direct trading relationship with foreign roasters and has registered trademarks in the United States.
After harvest, the coffee cherries are sent to the treatment tank to wash and screen out the defective beans, then the exocarp is removed by machine, and the pectin (Mucilage) is retained on the scaffolding for sun drying, which feels good close to honey treatment. Coffee fruit continues to absorb its own starch in the process to increase the sweetness of coffee beans.
