At the beginning of this year, we drank the sweet wine brewed from coffee peel by our brothers in Xiaoquan producing area. The bright color is stunning red, and the taste of the entrance is so cool-how can there be coffee fruits in the world with endless possible fruits!

In order to make Xiaoquan 3.0 Yunnan small grain coffee have more fermented aroma, we found inspiration in the Japanese sake Gankou wine brewing-so that the flavor produced by fermentation and the sugar of the fresh coffee fruit itself can be retained.

On the other hand, the latest coffee fruit harvested from the producing area at an altitude of 1600, the full red fruit, has a sugar content as high as 24%. This kind of gifted sweetness is full of face given by nature, how dare it be disappointed?

We divide the fruit into two parts and brew it in an airtight container with an one-way exhaust valve. One part converts the sugar fermentation of 1max 3 into lactic acid, and the other part converts 100% sugar fermentation into wine flavor, similar to the compound fermentation of sake in the brewing process.

Finally, the original soup turned into the original food, and two kinds of raw beans with different degrees of fermentation were blended.

The combination of sweetness and wine rhyme tastes like blackcurrant soda in our childhood memories, but without choking hot nose and mouth; sweet, slightly alcoholic coffee makes us understand in an instant that this is what we should have when we grow up.

It seems like a simple attempt. God knows how much wine we drank to make it happen.

We pay tribute to the warm wine culture of our second hometown, and succumb to the beauty of lips and teeth brought by fermentation, and dedicate this taste to you who have grown up:
