Hunkute is a cooperative of 2000 small coffee farmers located in the Sidama region of southern Ethiopia. It is planted at an altitude of 1600-1900 meters. After harvesting, it is washed to remove the peel and pulp, fermented in a chuli factory for two days, and then dried naturally in the sun for ten days. The elevation is the highest in the production area. There are two washing fields nearby, namely Honggu 1 and Honggu 2. Dalle Community located in Sidamo has 270 members. Field 1 is 1850 meters above sea level and was established 10 years ago. Honggu 2 is 2150 meters above sea level and was established 5 years ago.

Two washing fields will collect cherries from nearby farmer members. The washing process removes the peeled, pulped beans and ferments them in the processing plant for 24-36 hours, depending on the weather. Then wash the surface mucus, divided into two grades, and then soak in water for 12-24 hours. After the entire washing process is completed, it will be exposed to natural sunlight for 10-15 days on the African elevated bed. All cooperatives in Ethiopia belong to a guild. Honggut belongs to Sidamo Union. Only guilds can sell and export coffee. Before exporting, they will first shell and grade coffee.
