The coffee beans grown in the Yega Sheffield area are all Ethiopian native varieties (Heirloom). This variety is different from other coffee varieties we know. Heirloom is not aimed at one coffee variety, but a mixture of very many coffee varieties.
Ethiopia, as the birthplace of coffee, has an unimaginable number of original varieties, and these numerous and complicated varieties are mixed and treated, making it more difficult to trace the varieties, so the "native species" is used as a generalization. this is collectively referred to as unidentifiable coffee varieties.

Is the hand-washed Yejia Xuefei very sour?
Although most of the Yejiaxuefei coffee beans sold are mainly lightly roasted, their taste is actually not as sour as people think. It is more like the feeling of diluting lemon juice diluted by green tea in a large proportion. I can feel the bright and clean sour taste again.
At present, there are some water-washed beans and some sun-treated beans sold in Qianjie Coffee. Yejia Xuefei treated with water washing is very clean and thorough in the presentation of flavor, while Yega Xuefei treated by the sun is asked to climb to another high-rise building in terms of fragrance concentration. Both treatments are loved by the public, and there is no distinction between pros and cons.

Lightly roasted "Godding Cooperative washed Yega Chuefei Coffee beans" and "Sun Red Cherry Yega Chevy Coffee beans" both recommend medium and fine grinding (the size of fine granulated sugar), water temperature of 90-91 degrees Celsius, and V60. Brew at 1:15.

In the first stage, 30 grams of water is injected for 30 seconds, followed by 95 grams (about 125 grams indicated by the electronic scale).
