Flint Manor in the Walken area of Panama | what is the flavor of geisha rose summer and Kaduai seed honey treated with sun drying?
When Flint Manor became famous, we had to mention an important person-Graciano Cruz. The status of Graciano Cruz may be very familiar to all of you. As a pioneer and promoter of Panamanian tanning and honey treatment, he co-founded Ninety Plus with Josseph Brodsky, and then founded HiU, extending its experience to many producing areas and bringing Flint Manor to the world stage. The batch of Flint Manor we introduced this year is also a special reserved edition that we and Graciano Cruz personally selected. In November, the coffee show Graciano Cruz also showed up to hold a sharing meeting for friends in Taiwan. Graciano Cruz is committed to experimenting, developing and promoting honey and sun treatments that use almost no water source and reduce the impact on the environment. All of his estates only produce honey treatment and sun exposure, and they have not consumed any valuable water resources in post-coffee processing for many years.

In fact, the location of Flint Manor is in such a remote and unreachable place. Open the Google map, enter the GPS coordinates of Flint Manor, and you will know his location immediately. Pull the map a little further and you can see that Flint Manor is not in the well-known Boquete or Volcan producing areas, not even the Santa Clara producing area where Hartman Manor and Aurora Manor are located (Santa Clara). But further north of the Aurora Manor, deep into the mountains, near the Costa Rican border, a place called Jurutungo/ Piedra de Candela. In fact, it takes more than two hours to drive westward from the town of Volcan to reach Flint Manor.
If we start from the well-known Boquete producing area, it will take us two hours to reach the town of Volcan, and we will wind our way west along Highway 43 that will eventually cross the border. About an hour later, we will reach Santa Clara. Our beloved Finca Hartmann Manor is almost there. All the way up from the picturesque industrial road of Route 43, we finally smell a little of our deadly bean hunt, as we pass another famous manor, FST (Finca Santa Teresa), about 1500 meters above sea level. As we go further, we will pass the lowest point at the entrance to the crazy Aurora Manor, but this is not over. We continue to walk in the spirit of the fire and water and finally reach the Flint Manor. In fact, when we walked on the Flint Manor, the owner pointed to the west or north side of the slope and told us that it was beyond to Costa Rica.
In terms of climate, we have visited Santa Clara and Wakan more than three times, and this is the first time we have come to Flint Manor so deep in this area, but to sum up our observation, the micro-climate environment here is quite different from that of Boquet. Boguet bears the sea breeze caused by the topographic gap in the Atlantic Ocean, coupled with topographic changes, the micro-climate is rich, and the climate is also very humid. Rainbows are still hanging in the distance where the sun is out of the sun, and there are still rainbows in the distance, and there are calm waves on this side and jitters in the valleys there. or it is common to get foggy in the morning, raindrops at noon, sun and light rain in the evening. But the situation in the whole Wakan region (including Santa Clara or Flint to the west) is very different. The mountain barrier to the north of Wakan is so deep that it is more difficult to rely on the wind to roar in the Atlantic Ocean. It is often cloudless and sunny, and it is a very different feeling to bypass the Volcan Baru volcano. Further westward to the Santa Clara area, the clear sun and dry air seem to continue to rise. We visited the estates in this area again when we served as the Best Of Panama international judge in May 2016. In the manors in the Boguet area, there are still a lot of light rain in May, while the coffee trees in Santa Corala are still very repressed, which is really different, but the suppression of coffee trees is also a natural cycle. it tends to make coffee trees blossom and bear fruit more concentrated. maybe we vaguely feel that there seems to be a higher trend in the sweetness of coffee in the Clara area, so let's continue to observe and verify it.
In addition to the popular batch of sun tanning, another signature of Graciano Cruz-honey treatment is a treasure flavor that can not be missed. The honey treatment of Graciano Cruz is a classic that deserves our careful aftertaste, especially the honey treatment batch of geisha / rose summer, while using honey treatment to increase the texture, thickness and complexity of coffee. Give a clear account of the charm and detail of the original intention of the geisha / Rosa

Qianjie recommended cooking:
Filter cup: Hario V60
Water temperature: 90 degrees
Degree of grinding: small Fuji 3.5
Cooking methods: the ratio of water to powder is 1:15, 15g powder, the first injection of 25g water, 25 s steaming, the second injection to 120g water cut off, waiting for the powder bed water to half and then water injection, slow water injection until 225g water, extraction time about 2:00
Analysis: using three-stage brewing to clarify the flavor of the front, middle and back of the coffee. Because V60 has many ribs and the drainage speed is fast, it can prolong the extraction time when the water is cut off.
