Yunnan small-grain coffee refers to Arabica coffee beans grown in Yunnan, China. The reason why it is called small-grain coffee is that the missionaries who brought coffee to Yunnan at that time chose the plant with smaller fruit and the best flavor, which was called small fruit / small-grain coffee. Later, this variety was also confirmed as Arabica coffee.
General situation of Coffee producing areas in Yunnan
The natural conditions of Yunnan are very similar to those of Colombia, that is, low latitude, high altitude and large temperature difference between day and night. The quality analysis of the cup shows that the small grain coffee is mellow and tastes similar to Colombian coffee.
According to Qianjie Coffee, Yunnan Province has a coffee planting area of 1.5673 million mu, which is mainly distributed in hot areas between 500m and 1800m above sea level in the Nujiang, Lancang, Red and Jinsha Rivers, bordering Vietnam, Laos and Myanmar in the south and reaching the Jinsha River basin in the north.
It mainly includes 31 counties (districts and cities) of Pu'er, Lincang, Baoshan, Dehong and Xishuangbanna, including 785000 mu of Pu'er City, 422500 mu of Lincang City, 136500 mu of Baoshan City, 113000 mu of Dehong Prefecture and 94700 mu of Xishuangbanna.
Among them, coffee at low altitude can be harvested in September, because it is hot and humid at low altitude, which speeds up the growth and ripening of coffee. On the other hand, high-altitude areas will start in late November, and the diurnal temperature difference formed at high altitude will prolong the growth and maturity of coffee and give it enough time to form a more refined flavor. Therefore, the flavor of Yunnan small-grain coffee above 1200m will be more delicate and full.
Yunnan coffee varieties
At present, Katim coffee is mainly grown in Yunnan, which is introduced by Nestl é. It is widely planted by coffee farmers in Yunnan because of its high yield and low maintenance cost.
This variety is a new hybrid of Timor and Kaddura developed by CIFC, a Portuguese coffee leaf rust research center, in 1959. Katim is characterized by high yield, short plant, close planting and good disease resistance. Because the Katim variety carries the Robusta gene, its bitterness and fishy smell are more obvious than those of Arabica purebred, and have a slight disadvantage in cleanliness, fruit rhyme and richness.
However, with the more scientific management of the producing areas in recent years, farmers also have a more scientific way of growing, so the quality and flavor of Katim coffee in Yunnan have been greatly improved in recent years!
With the increasing demand for coffee quality, many coffee farmers will also grow tin card varieties. In fact, the oldest variety in Yunnan is the iron pickup, but the iron pickup is not good at disease resistance. At that time, people gave up quality in order to catch up with the quantity. But the clean flavor of the tin pickup variety is indeed beyond Katim's ability to copy.
In 2013, Qianjie coffee began to grow mainly iron pickups and a small number of bourbon varieties on a mountain in Lincang, Yunnan province. One of the reasons for choosing the iron card variety is that as one of the oldest coffee varieties, the gene of the pure Arabica variety, which has an elegant and clean flavor, has always been recognized as a boutique coffee variety.
Hope that through the change from the root of the variety, so that everyone can drink Yunnan small coffee beans with more flavor and better quality. At present, these home-grown Yunnan iron pickup coffee beans can be bought at Qianjie flagship stores and Qianjie coffee stores.
Flavor and taste characteristics of Yunnan small grain coffee
Compared with the tin card variety, although the Katim variety carries the gene of Robusta, today's Katim in Yunnan is no longer the kind of flavor that is difficult to swallow, under reasonable planting and traditional treatment. Yunnan Katim small-grain coffee will show the flavor of nuts, caramel and plums.
The clean taste of the tin card coffee beans, coupled with Qianjie coffee, are carefully sun-dried to show berries, brown sugar, nuts and black tea.
