Yellow Catuai is a hybrid of Mundo Novo and Caturra. It was first cultivated in Brazil in 1949. Yellow Catuai has the same disease resistance as red Catuai. It is suitable for planting at high altitude. Both kinds of Catuai have a delicate and clean sour taste. Double fermented honey treatment: through machine adjustment, it produces a richer flavor than yellow honey, red honey and black honey.
The treatment process is [double fermentation honey treatment], which is to cool the coffee fruit into the state of raisins (the fruit for raisins must be mature fruit, and the best is drying in the shade. The raisins made from seedless grapes in Turpan, Xinjiang, China are the most famous. Turpan has a hot and dry climate. There are many wall holes on the four walls of the drying room made of bricks. In the middle is a support made of wooden sticks. Mature seedless grapes can be put on it. After hot wind blowing, high-quality raisins can be obtained quickly. Then peel honey fermentation will be carried out. The fermentation flavor will be stronger, and pectin preservation will be higher than other honey treatments. Claimed to be 100% pectin honey treated, it really has a raisin flavor.
