[introduction to the Manor]
Shenli Manor is located in Palestina, the southernmost town of Huilan Province, Colombia. Like most Huilan coffee growers, it is a small family coffee farm with an area of 5 hectares.
Tabi is an improved variety developed and promoted within the Colombian coffee research institute CENICAFE, named after the language of the local indigenous tribes, meaning "good". It took more than 40 years from 1961 to 2002. Tabi is an excellent variety obtained by artificial hybridization of Typica Bourbon and Timor Hybrid among which the most remarkable feature is its strong resistance to leaf rust. That's why Orlando, like most farmers in Huilan, chose to grow Tabi. Another advantage of the Tabi variety is that it follows the high-quality cup performance of iron pickup and bourbon, which can be planted with high density and adapt to high altitude, which is a dominant variety for most farmers with general planting conditions.
After the efforts of two generations, Shenli Manor has made a neat plan for the planting, and the coffee tree bears full and healthy fruit. After harvesting the full-ripe fruit, Orlando will lead the workers to screen the unqualified fruit again. The selected full-ripe fruit is rich in pectin, which is very suitable for honey treatment. After peeling, the fruit will be fermented and dried with pectin on the sun bed for 23 days.
