Valle de Cauca and the Nasa people
Cauca Valley is a beautiful and diverse area located in southwestern Colombia. You will find that the coastal lowlands and mountains are covered with green carpets of tropical forests. The towering peaks of the Cauca Mountains belong to the Western Cordillera Mountains and the Central Cordillera Mountains. Two "subregions" of the Andes across western South America.
Cauca is home to NASA tribes. NASA is a native people living in harmony with nature. They think they are the managers of nature and need to protect their environment. NASA even organized raids to ensure that nature was not harmed. They cut down sugar cane, burn land, and replant corn and cassava; more traditional crops. These actions may be considered extreme, but Nasa takes their roles seriously. Their motives are deeply rooted in their culture and beliefs.
Coffee is a tool of peace.
The people of Colombia, especially the people of Cauca, have experienced a history of drugs and violence. This unrest has destabilized the area and left deep scars in the community. However, the peace agreement in Colombia changed that balance. With the advent of peace, coffee began to prove to be another option for Nasa. Most people at NASA have abandoned illegal economic opportunities and opted for coffee. Coffee brings hope and economic growth.
Cencoic cooperative
Coffee is considered to be one of the tools of peace in Cauca. The Cencoic Cooperative is one of the organizations of the Peace Movement that understands coffee. Through coffee, Cencoic strives to improve the lives of its members. Cooperatives provide advice, education and assistance during harvest and processing.
The centre has 19 groups and a total of 2757 smallholder families; all of them are heavily dependent on coffee income. These families are located in Torribio, Santander de Quirizzio, Cardono, Morales, El Tambo, Corinto, Miranda and Almagur. On average, producers own 0,587 hectares of land, and their farms are located between 1400 and 2200 meters above sea level. Varieties such as Castillo, Caturra, Typica and Bourbon are loved and welcomed by growers.
About the coffee shop Femenino, reserve a Caldono, and reserve a Tacueyo
Cencoic cooperatives can provide a range of high-quality products. This is because they are connected with each other and have established 19 associations. Each association is a flexible entity that can monitor and improve day-to-day operations. As Trabocca, we have begun to work with two associations, Asprocrit Asprole.
The cafes Femenino and Reserva Caldono are produced by the Asprole Association, which is one of the larger organizations in Cencoic. Cafe Femenino is produced by 932 peasant families living in Popayan. The cafe Femenino pays homage to the women of NASA's tribes. Because in daily life, women play an important role and are often the masters of the family. Cencoic recognizes and respects the influence of women in the community and coffee production. The Cardono Reserve is produced by 454 producers who have settled in the city of Caldono.
Reserva Tacueyo is produced by the Asprocrit Association, another large organization in Cencoic cooperatives. A member of the Asprocrit Association, numbered 516, lives in the city of Torribio. Most of the members of the Aspler and Asprik Association belong to NASA.
Deal with
These families try to pick and brew coffee on the same day. They ferment parchment in their backyard for 14 to 18 hours; use clean ceramic cans. However, climatic conditions determine the time of fermentation. In warm areas, farmers work 12 hours, and in cold areas, parchment ferments for 18 hours.
After washing, the parchment is moved to the terrace, where farmers have installed parabolic dryers. Parabolic dryers are used to dry parchment more effectively rather than in the sun. Parabolic dryers, in fact, African drying beds are covered with plastic, use less air, and even protect parchment. When the water content of parchment reaches 11.5%, the drying is completed.
Coffee from Cencoic, Reserva Caldono and Reserva Tacueyo has unique characteristics. However, we noticed that Cauca's coffee had similarities. For example, the aromas of flowers, caramel and honey. It has aromas of caramel, red fruit, citrus, orange and chocolate. Generally speaking, the wine is full-bodied and juicy with moderate acidity.
