Qianjie-introduction to Yega Chuefei Coffee
Yega Xuefei is located in Ethiopia, the hometown and gene bank of coffee, and it is also the place where people first met coffee. Because of the wide variety of coffee, the coffee variety of Ethiopia is called the native species.
There are many excellent coffee cooperatives in Yegashafi, and konga cooperative is one of them. It is called Kongjia because of its proximity to the konga River Basin, so it is named after the river as the name of the cooperative.
There is a very famous alliance in Ethiopia called the Yegashifi Coffee Farmers' Cooperative Union, or YCFCU. There are 26 cooperatives in the alliance, and the Conga cooperative is one of these 26 cooperatives.
In Ethiopia, coffee is grown by small farmers. There are about 1556 families of small coffee farmers under the Konga Cooperative, who grow coffee with an average area of less than 1.25ha and grow coffee at an altitude of about 1800-2000 meters.
Why is the coffee produced by the Conga Cooperative so special? One of the keys to the production of so many excellent coffee beans by the Konga cooperative is the soil. The soil on which coffee beans are grown in the Kongjia cooperative is red soil. Iron rich in red soil can help plants carry out photosynthesis, allowing plants to absorb more energy and produce more high-quality fruits.
The Conga Cooperative has its own washing plant to handle coffee cherries collected from small farmers. The whole washing process can be said to be very meticulous. The freshly harvested ripe coffee cherries were peeled off with a peel machine, the pulp and pectin were retained for fermentation, and the pulp pectin was removed in the process of fermentation. After fermentation is completed, wash with clean spring water and use tools to remove the remaining pectin by friction.
Finally, the shell beans will be put on a shaded elevated shed for drying for about 10-12 days, and when the moisture content is reduced to 12%, the beans can be moved to the warehouse to wait for the exit!
We chose to use light baking to show the acidity of flowers and fruits of this bean, which has obvious flavors of citrus, flower, tea and honey.
When ground into powder, you can smell the aroma of citrus, flowers and green tea, whether by siphon or hand cooking, you can drink the obvious flavor of orange, jasmine, maple syrup and black tea, just like drinking a cup of lemon black tea
