The farmer who planted the pink bourbon is William Gomez, whose farm is Graner Manor, the second highest producing area in Colombia, with an elevation of 1800 meters. The large temperature difference between day and night provides a microclimate for the production of high-quality coffee. The farm covers an area of only 5 hectares, which William did not own until 14 years after he borrowed money from the bank.
There are 5000 pink bourbon species in the manor. Pink bourbon is a new variety produced by the cross between red bourbon and yellow bourbon. This is a very rare high-quality coffee bean with strong resistance to leaf rust. William was able to get the opportunity to grow pink bourbon thanks to a man, Gabriel Castanal. After Banexport, a famous Colombian exporter, first confirmed the new bean as pink bourbon through genetic comparison on Gabriel's farm, Gabriel was faced with a life choice-he chose to cooperate with Banexport to get five years of bean money in advance, and all the beans in the manor were underwritten, but to sign a confidentiality and exclusive agreement. Do not leak the seeds of pink bourbon to anyone, although Gabriel is burdened with loans and the economy is not well-off, he made a brave decision to give up the opportunity of cooperation and share the seeds of pink bourbon with all farmers in the same district, which gives all small farmers in the region the opportunity to grow legendary pink bourbon.
This pink bourbon is fully ripe. When the cherries are screened, peeled and fleshed, William's exclusive anaerobic method is used to ferment the shell beans and remove the residual pectin for 50 hours.
