At first, the estate was mainly grown with corn, tobacco, beans and sugar cane. Coffee was not grown until 1990, and the estate was officially named "El Injerto" after a local fruit called "Injerto" was found in the area.

Eincht Manor is the forerunner of the Central American selection of coffee, which is affected by the warm hot wind in the Mexican lowland valleys, warming the steep sharp-toothed peaks and narrow valleys, allowing coffee to grow at such a high altitude. Incht Manor has quickly become a world legend for its coffee quality and is one of the first estates to focus on a single variety and vertically integrated production of high-quality coffee. Won a total of 27 awards in 15 years in the Cup Of Excellence competition. Each Aguirre family continues to improve the production quality of their estate. They pay attention to all the details of the whole process, including floating, fermenting, soaking, drying, proper storage, and having their own drying plant.

In addition, Eincht Manor constitutes a perfect habitat for wildlife, with the intention that coffee is planted in an ecosystem that protects our natural environment. The forest area is surrounded by coffee plantations, which have annual rainfall of about 1800-2000 centimeters and a relative humidity of 75 percent. The soil is a deep volcanic soil with good drainage and rich in organic matter.

Eincht Manor Elephant beans

Maragogype (Elephant Bean) is also one of the proud varieties of Eincht Manor. Because of its particularly sturdy bean body and unique flavor, the micro batches of this variety in the manor can only be purchased through the auction of the manor in previous years. In recent years, Eincht Manor has even retained all of its own Maragogype as the exclusive coffee beans of Eincht Cafe.

Its special bergamot and small white flower aromas show excellent performance in this bean when it is dry, and the taste of some Xu rum wine is memorable.
