Since 2009, Proud Mary has been preparing to open its third cafe in Melbourne. The global financial crisis hit, and all Australian property values depreciated sharply. Nolan is planning to open Proud Mary after selling her second cafe, Liar Liar. He wanted everyone to drink as many varieties of coffee as possible in his cafe. He envisioned Proud Mary as a place where people could meet, entertain, and enjoy themselves. Even people who work here ask,"Hey! How was your day? What do you think?" Driven by this ideal, Nolan began collecting as many varieties of coffee as possible.
Nolan built this cafe according to his own vision. When Proud Marry first opened, Nolan offered an American-style self-catering service where people walked to the bar to order drinks and food. "But in Melbourne people don't like it at all. No one wants to accept this kind of service. My customers are obviously angry." He said,"I want to change. Within a month, I realized the seriousness of this mistake. We still have the traditional waiter order service."
It was this change that boosted Proud Mary's popularity, especially with its bar, which was most popular with customers. When the cafe opened, Nolan bought a Clover coffee machine and built a special bar for siphon pots. When Clover coffee machines were forgotten, people began to pursue siphon pots. Slowly, the store began selling hand-brewed drip coffee at the same time. Nolan bought enough coffee mills to grind different varieties of specialty coffee to meet consumer demand.
"I've always believed that coffee makers should be flexible enough. You need to constantly learn and change. Don't be too persistent about something." Nolan says,"If nobody drinks your drip coffee, try making espresso." It's important that you keep changing so you can keep up with the pace of people's consumption needs."
Here is what Nolan has in store:
1. Record player;
"This is very important. In fact, the first thing I bought was a record player." Nolan had been a DJ before, so he thought the music in his cafe had to be consistent with the overall style.
2. funnel-shaped containers;
Six funnel-shaped containers are kept in the shop to hold the variety of hand-brewed coffee used every day. The barista can easily pick, weigh and fill the beans.
3. Coffee mill (for coffee machines);
Nolan bought many coffee mills in the cafe, but all of them had a mission: each mill grinds only the corresponding coffee variety; the degree of roasting varies with the mill; and different coffee grinds use different coffee handles. Proud Mary Cafe has two espresso coffee machines, and the barista grinds the coffee beans daily using a designated coffee mill.
4. Coffee refrigerator;
Nolan's refrigerator stays at a constant temperature of 9° all year round. "I want to make sure that coffee doesn't spoil under the influence of temperature, which is especially important in the hot Australian summer." "It can get up to 45 degrees outside and coffee spoils quickly," he said.
5. Hand brewed coffee pot;
"No matter where you sit in the coffee shop, you can see the siphon pot bar, which is very attractive to people." When it first opened, the place housed a Clover coffee machine and siphon bar. Clover coffee machines no longer exist, but Nolan intends to purchase a V60 coffee machine by December.
6. Coffee mill (for making coffee pots by hand);
It turns out that all three coffee mills are used to grind coffee powder used in espresso machines. Now, Nolan uses them to grind the coffee beans used in single-ingredient hand-brewed coffee pots.
7. Cashier;
"Some people call me a restaurant here," Nolan said, referring to the Americans."There's no line. Everyone can sit down." Starting this week, the cafe will hire five or six more waiters, who will join three baristas and kitchen staff to form a team here. "That's what people want." Nolan said.
8. Six head Big Mac coffee machine;
Three of the machines are used for espresso and the other three for coffee with milk.
9. Concrete sink.
