Roasting and Tasting of Coffee Beans from Kocherye and Sherfield Round
Yega Xuefei (transliteration of yirgacheffe) has always been unique in the boutique coffee industry with its soft translation name and refreshing and elegant taste, making many coffee experts bow down to their own pomegranate skirt. What is called Yejasuefi, many people may already be familiar with it, and I will not continue to talk about it here. I will simply say one or two sentences. Yejasuefei is one of the most important coffee producing areas in Ethiopia. It belongs to a region of Sidamo Province, which is mainly washed. The coffee is famous for its floral and citrus flavor, and it is the representative of Ethiopian high-quality coffee.
This time the roasted peaberry beans are Yega Xuefei, which usually contains only one coffee seed in a coffee berry, accounting for about 510% of the whole coffee tree. Tanzania is a country that singled out peaberry for sale a long time ago, but Ethiopia and Kenya rarely have this habit. In many places, people thought that such coffee round beans belonged to stunted coffee, so they naturally thought that they were not good, even as defective beans, but some people thought that the nutrients originally needed to be shared by two beans were now concentrated on one bean, so they should have a stronger taste. In fact, up to now, there is no absolute conclusion about the taste of round bean coffee.
Yega Sheffield Kirchell is the producer of a lot of premium Yegashefi coffee in the past two years, while Adulina Adulina is a company specializing in buying premium Ethiopian coffee. Yega Xuefei, which is basically in the hands of the company, is of high quality coffee.
Because they are round beans, the particles of raw and cooked beans look slightly smaller than other traditional grades of flat beans, and although they swell a lot after baking, they still look a little small. Yega Xuefei's quality never depends on its shape.
After grinding, there is an obvious aroma of orange, slightly sour in the mouth, with the taste of jasmine, accompanied by the sweetness of lemon and citrus, and a hint of almond and cocoa in the back, with moderate mellowness, which is suitable for the use of hand flushing, siphon, French pressing and other instruments.

Select defective coffee beans in pursuit of better flavor
Anyone who has baked coffee knows that no matter how good the boutique manor coffee is, even the COE award-winning coffee will inevitably be mixed with a small amount of defective beans. So sometimes in pursuit of a better flavor, roasters pick up coffee beans that are noticeably flawed before or after roasting. Ethiopia is the hometown of coffee, and there are still a large number of native species of coffee.
