At an altitude of 1,600 ~ 2,400 meters, Harar Heights in eastern Egypt is one of the highest altitudes for human coffee cultivation (some even claim to be as high as 2,000 ~ 2,700 meters), overlooking Mocha and Aden Ports in Yemen across the Gulf of Aden. For centuries, Harar coffee farmers have transported their beans by camel, donkey or wagon, risking being besieged and eaten alive by coyotes, to the port of Djibouti below the mountain, and then shipped them to Mocha Port in Yemen for export to European countries. Harar's coffee history is much older than that of Yerga Shefi, and the soil, climate, processing methods and flavors are also different from Yerga Shefi. Harar is a cool dry climate, best sun treatment, flavor characteristics similar to the Yemeni mocha across the bay, so Harar is also known as Harar mocha. Harald's beans are mostly long beans, which are obviously different from the short round beans of sun-dried Yejia Shefei.
Yemeni mocha is more famous than Harald mocha in coffee history. Although the Yemeni coffee variety comes from Harar's long-body beans, Mocha Port has become a distribution center for European powers to seize African coffee resources due to its geographical location, thus contributing to the fame of Mocha Coffee, and Harar has become a hero behind the scenes.
It wasn't until 1880, when French poetry prodigy Lambeau found mocha too hot, that he moved to dry Harald to engage in coffee trading, and Harald gradually became internationally famous.
Although it is not as clean as Ye Jia Xue Fei, it is mixed and not chaotic. This is the so-called Harald flavor, which is suitable for deep baking and shallow baking. I personally prefer to bake until the beginning of the second explosion, the sun's unique fruity flavor is more concentrated, if you prefer the sour flavor of blueberries, bake a little lighter, but you can't expect the same quality every year. Drink happily this year, next year may not be as you wish, be mentally prepared.
