Hartman's story, like his coffee, is legendary. Hartman Manor is located in Chilidge, Santa Clara. The founder's name is Eloise Strauss Hartman. He was born on June 20, 1891 in the Moravilla region of Austria and Hungary in what is now the Czech Republic, and died on May 25, 1970 at the age of 78. Today's Hartman Manor is a family business founded by Latip Hartman (son of Eloise) in 1940. In 1966 Latip married Dinola Sandy of Costa Rica. They have five sons, Latipa Jr., Alan, Alexander, Alice and Kelly. Each family member is responsible for the growth management, harvesting and handling of the coffee and the visit to the manor. A family estate that has grown coffee for more than a century is itself a legendary Willem Boot, the owner of two Panamanian farms, Finca Som í an and Finca La Mula, who also grow award-winning Rosa Coffee. In February 2015, I went to Finca La Mula Manor with the professional manager of Boot, along with my friend Kelly Hartmann, a Panamanian native. In summer in Panama, the climate from January to April is much drier than when I first visited Panama. But Boot reminds me that when you get to the farm, you will find that "dry" is only relative. "this is basically a forest in the clouds, and when the clouds come, the temperature will drop sharply." This is how Boot describes it. We climbed the steep hillside of the manor and passed through the thick clouds, which covered everything.

Geisha is a very rare coffee variety, which has caused a sensation among coffee connoisseurs all over the world over the past five years. It is considered to be the brightest, richest and most strongly fragrant coffee variety. Before it won its international reputation, Rosa was first brought to Costa Rica by Don Pachi from the town of GESHA in southwestern Ethiopia, and then from the southern route into Panama, for which we thank him. These coffee trees grow at very high elevations and have beautiful slender leaves. Its fruits and raw beans are also slightly slender compared to other top-quality high-altitude coffee. Rosa is full of sweetness and cleanliness on the palate, with rich aromas ranging from berries and citrus to mango, papaya and peach

Boot told us: "if the cloud period is regular and becomes a regular phenomenon, it shows that it can cause some unique situations for trees." Especially in the presence of fruit trees, plants will respond to the environment and adjust themselves. When there is no sunlight, the leaves get a higher water supply, and the photosynthesis of the trees is slow, which lengthens the ripening period of cherries, making the flavor stronger, especially in terms of sweetness and acidity. " So will humidity make it more difficult to grow? "it doesn't matter," Boot said. "We want these unique things to happen, and that's what makes them unique."
