The Taste and Flavor characteristics of aricha Coffee beans
Introduction to the characteristics of the method of describing the Flavor of Yejiaxuefei Coffee
Yirgacheffe Aricha Grade 1 raw bean color is yellow and green, is a typical sun-cured coffee color, uniform and full particles, few defective beans, using ordinary sack packaging for export, the sack printed with basic information of coffee (processing plant, exporter, ICO code, treatment method, production area) the sack is a plastic bag for agricultural products packaging, this coffee can best reflect its characteristics by using light slow baking method, Yega Xuefei is produced in Kebel Aricha processing plant. There are about 650-700 small coffee farmers nearby, who send ripe coffee berries here for processing and in exchange for cash. After the treatment plant selects the available berries, they are directly exposed to the sun on the scaffolding and are turned every 2-3 hours in the first few days to prevent overfermentation. After four to six weeks of sun exposure, the workers will scrape off the outer pulp with a machine according to the weather and temperature, and then transport it to addis for storage. Usually, sun-treated beans are stored in the form of shell beans, and they are not shelled until they are exported to ensure the quality of raw beans.
Yejia Xuefei, nearly 2,000 meters above sea level, is one of the highest coffee producing areas in the world. It has been a wetland since ancient times. "Yirga" means "settle down" and "Cheffe" means "wetland". Lake Turkana, Lake Abaya and Lake Chamo bring abundant water vapor. The Rift Valley, represented by Misty valley, is foggy all the year round, like spring all year round, with a gentle breeze, cool and humid, and thousands of coffee trees thrive, giving birth to the unique flower and fruit fragrance of Yega Xuefei. Yega Xuefei exudes extremely complex aroma, showing an extremely excellent taste, which is difficult to describe. In general, the dry aroma of Yega Chuefei is full of fruit, with strong aromas of dried fruit, strawberry, mango and apricot jam. Wet fragrance is like sweet syrup, like sticky apricot juice, wrapped in plain honey or chocolate. The entrance is not strong, the alcohol thickness is medium, the sour taste is not obvious, but it is lively and bright, like fruit black tea. Yejasuefei's grading system is not distinguished by the number of eyes, but according to the proportion of defective beans in the total number of raw beans. Commonly seen is washing G2 and sun G3 Yega Chuefei, G1 is the highest grade, its own defect rate is the lowest, the best quality Yejia Xuefei again after hand selection, can be rated as Grade 1 to get the beans, the first time did not use ordinary hand flushing or Philharmonic pressure or anything, but hand-washed filter, directly into the cup with ice. The flavor of the fermented wine of wet ripe berries makes people not believe that this is Yega Chuefei, but this kind of wet fragrance is not very popular. But from the extremely smooth entrance to the delicate mellow thickness, the sour and sweet appearance of ripe fruit is really amazing, more sweet than any Yega I have ever drunk before. Yu Yun's performance is also quite good, worthy of the "fruit bomb", which can basically guarantee that the mouth can still feel sweet for half an hour after drinking.
