2002 was a turning point for Emerald Farm because of Mr. Peterson's youngest son, Daniel Peterson Daniel. Peterson believes that the coffee produced in the two areas of the whole Jade Farm (two major areas of coffee cultivation in the manor-the original Jadeite Manor in the southwest of Boquete and the new Jaramillo production area in 1996) has always been mixed and sold. Although the overall quality evaluation is good, it is not necessarily the same quality and flavor. The extremely elegant citrus fruit aroma and sweetness should come from the flavor of some excellent coffee on the farm. So he began to test and compare the cups of each planting area in the garden one by one, and finally found the coffee harvested by these tall and thin coffee trees with low yield in the valleys of the higher elevations in the Jaramillo park, and the cup test showed that the flavor was excellent. After several inquiries, it was found that these varieties born at high elevations and low temperatures were later famous-GEISHA (Geisha) ~ 2004 Emerald Manor participated in the Best of Panama-BOP cup test competition with these special coffees. The unique aroma and saturated taste of Geisha surprised the judges at the meeting, and won the title of "Best Coffee in Panama" and set USD at auction that year. $21 dollars a pound ($21 per pound) history! This competition has made the geisha coffee of the Jade Manor get the boutique coffee world.

The hillside of the Baru volcano, 1750-2400 meters, lies between two lava flows, a microclimate area, where the rainy and dry seasons are very distinct. It rains from May to December, while January to April is blocked by the sea breeze in the Pacific Ocean, blocking the misty rain in the Caribbean and making the harvest season quite dry. It is precisely because of such perfect climatic conditions. Los Lajones focuses on honey treatment and sun treatment of coffee. The manor covers an area of 160 hectares, of which 35 hectares are planted with coffee trees, 14 hectares with coffee seedlings, 40 hectares for agricultural cultivation, and the rest for forests and working production land. Los Lajones is also the first organic certified manor in Panama. The first basic step of Los Lajones honey treatment is to select 100% ripe coffee fruit, then wash and remove the peel, place the slime-coated beans on an African scaffolding made of local bamboo and dry them for 10-12 days until the moisture content of raw beans is reduced to 11%. In this process, the mucous membrane attached to the coffee Parchment has an effect on the raw beans, which not only directly affects the sweetness of the coffee, but also indirectly improves the flavor and acid value of the fruit in the coffee.
