One of the main goals of this trip to Japan is to explore coffee shops! As a big coffee country, Japan also played a leading role in the third wave of coffee! There are also rumored superb deep baking techniques and "Japanese-style hand-impact extraction".

Coffee is considered a national drink in Japan. Vending machines sell several kinds of coffee, and it tastes good while it's hot. The price of coffee in the shop is also very affordable, usually 300 yuan (about 18 yuan) for a cup. But once in a while, of course I have to make a pilgrimage to the most famous store.

Although I drink it every day, the most amazing things must be Maruyama and amber coffee in Tokyo!

Maruyama coffee (Maruyama)

Maruyama is also a little famous in China (when he comes back, everyone knows …... ), it is also mentioned that the third wave of coffee can not get around the store. Mitsuizawa's store opened in 1991, while founder Kentaro Maruyama has been aware of the importance of "fine beans" since 2011 (he thought baking was the most important), buying beans 100-150 days a year. And each of the beans on display in the store will have the name and photo of the coffee farmer in addition to introducing the origin.

We went to the branch near Yuwei Station, and as soon as we entered the door was the display area, with coffee beans, coffee utensils and basic coffee knowledge, as well as a ready-made coffee pot for everyone to try beans.

The storefront is very large, there are a lot of menu choices, many kinds of single beans, and many season-limited matching beans (Japan really loves season limits)! Dazzling, of course we asked the waiter to recommend it!

Finally, I asked for 50lbs.ECP 's award-winning beans (though I don't know what the prize was) Costa Rica and a deep-baked manning.

Their hands use a metal filter that does not use filter paper, and the finished product retains the coffee grease. Although there will be fine powder dregs at the bottom, the taste is very smooth!

The coffee is served in a delicate pot, which has the feeling of drinking English afternoon tea. The first bite of Costa Rica is amazing! The fragrance of flowers and fruits burst in the mouth, and it was rich in layers. It was never too much to play a symphony, and it was still delicious when it was cool. Manning body is thick and mellow. Both cups are distinctive, but not monotonous.

Although the unit price is small, it is about 60 yuan per cup in the end. Not too big, poured out there are two cups (a total of about 300ml), absolute value!

There is also a cool automatic siphon pot (it seems to be called steamer plunge, pictured). You can use APP to set the water temperature and time to make a cup of coffee. The super-good shop assistant looked at me and asked, took the initiative to demonstrate the operation of the machine, and gave us a taste for free!

Of course, there are also French presses and all kinds of milk cafes to choose from. A wide variety of home-baked coffee beans also have a sweet choice of 100g and 200g, so it is convenient for everyone to buy a few more kinds to try.

Amber coffee

Tokyo's time-honored coffee, whether shop decoration or roasting and brewing methods are unique, simply subverting the understanding of coffee! Ichiro Kanaguchi, the 102-year-old boss, is said to sometimes come to the store to bake beans!

Amber sat in a quiet alley in the brightly lit Ginza. Push the door, next to the baking compartment, through the glass you can see a large roaster. Slightly dim lights, wooden walls, leather sofas, small round tables, refrigerators that feel to be scrapped, and three-legged garden chairs next to the wooden bar. It's like crossing to a tavern in an English town.

The menu also has Chinese and English menus, a lot of alcoholic fancy coffee (mixed with cognac / mondo orange wine, rum ice droplets. ), and the most famous "amber coffee" on the Internet.

The individual coffee menu is really knowledgeable! There are Brazilian raw beans in 1973 and Ecuador in 2003. We have always thought that coffee should be fresh. We have been brushed three times. Later, a Beijing raw bean merchant in the store answered our confusion: "at that time, the traffic was inconvenient, and if we met good beans, we would want to store them in large quantities."

Maybe it is the professional spirit of Japan to think of coffee as a lifelong career 44 years ago.

With our new friends, we ordered a cup of amber coffee, a cup of Brazil in'73, a cup of Ecuador in 2003 and a cup of Kenya. The "amber coffee" is packed in a champagne cup, and the barista slowly pours condensed milk into the surface of the coffee and specifically instructs him not to stir it.

A large enamel pot with an estimated capacity of 2L was burning on the gas stove, and the baristas weighed the beans on a tray scale (the one with weights) and put them into their custom bean grinder (which is said to be a machine that can't adjust the scale but can greatly reduce fine powder). Without measuring the temperature after the water was boiled, we held the enamel pot steadily in one hand and a light flannel filter in the other. We were dumbfounded when the net moved and the kettle moved. I sighed again and again why we had never thought that if the net moved, we could inject water from more flexible angles.

18g of beans only extracted 50ml (concentration grades are only 50ml, 75ml and 100ml), which is almost hand-flushed Espresso. Compared with the general Italian style, coffee is more sour, stronger and more flavored than ordinary hand brewing, as well as the fermented taste of wine, which is really as interesting as drinking Single Malt.

The final consumption is about 240 yuan.
