Tea, in the minds of many people, will be linked to Kyoto. But every time Shami comes to Kyoto, instead of looking for matcha desserts, he comes to Kyoto to find a coffee shop. Almost every year, I find a coffee shop to sit down. Last year, I went to Taipei and drank several coffee shops at a time.

The cafe in Kyoto always thinks of the town family. But instead of choosing a town that seems to suit their image better, Kaihua Hall is located in a concrete building that is a bit of a fu in the 1970s. The big floor-to-ceiling window looks like a coffee shop on the streets of Europe.

The decoration in the store is very simple, and very clean, there is no extra deliberate decoration, wooden furniture, bright and calm. There are no hindering pillars in the building, but the sense of space is actually very strong. There is a row of single seats facing the street outside the bar, while the one by the window is four. When I went in, the single seat was not ready and the window seat was already taken, so I chose the four-person table opposite the cashier.

The coffee here is made with Nakagawa Sakuka from Tokyo, which is a well-known hand-brewed coffee bean in Japan. Drinking hand-made coffee is very different from Italian coffee. You have to wait patiently, because each cup is made slowly by the barista. Baristas want to control the water temperature, gestures are also very important, can not be impatient. The coffee beans here are also made from hand-made coffee cans produced by Kaihua Hall, as well as kettles.

If you don't drink coffee, you can order tea. The Yulu Yanjin here is highly recommended by the shop assistant.

It's open at 10:30. I'll be there at 11:00. The clerk recommended this red bean toast. She said that red bean paste is home-made and will not be too sweet. Toast is fragrant and soft in the middle. The shop assistant knew a little English. she asked me where I came from. She was curious that a Hong Kong person knew that there were usually more Taiwanese here. She also said that there was a Taiwanese shop assistant here, a working student, but it was a pity that it was a holiday today, otherwise she could talk to me.

The tea tube is right next to the cashier, said the clerk. I can pick it up and have a look at it, feel the texture, and know what a tea tube is like. In Hong Kong, I can probably only look at it from afar, as if it is the wrong door and the feeling of great disparity in identity. It was only when I came to Japan that I felt that the high-end products were actually very close to me.

Kyoto Kaihua Hall, founded in the eighth year of Meiji, can be said to be the oldest handmade tea tube shop in Japan. The tea tube of Kaihua Hall is not painted on the surface, and its depth is increasingly revealed with the material's unique touch similar to silk, as well as its soft luster. Kaihua Hall used the force (tinned iron) imported from Britain, and they still adhere to more than 130 delicate steps that they must go through, all of which are made by hand, so that Kaihua Tang is still standing in this rapidly changing generation.
