Cold water is put into the pot to create a low temperature extraction environment.

Heating the pot with hot water helps to create a high temperature extraction environment with 70% boiling time above 90 ℃; if the pot is heated with unboiled cold water, it helps to create 50% low temperature extraction environment with boiling time less than 90 ℃.

In principle, deep-baked beans or beans with low density and easy to increase the extraction rate should be extracted at low temperature, that is, heating the pot with unboiled cold water, there will be a better taste spectrum. Beans baked in shallow medium or with high density, which are not easy to increase the extraction rate, should be extracted at high temperature, that is, the pot should be heated with hot water, and the taste spectrum is more charming.

Hot water is put into the pot to create a high temperature extraction environment.

Insert it directly to create a lower water temperature

Straight or oblique insertion of the pot will also affect the temperature of the extraction water. When the lower pot is heated, the upper pot is directly inserted, and the upper and lower pot is sealed first. The pressure of the lower pot rises sharply, which helps the hot water to rise into the upper pot earlier, so the temperature of the extraction water will be slightly lower. However, if the temperature continues to be heated by a medium fire, the temperature of the upper kettle will soon reach 95 ℃, and the direct insertion method will create a lower temperature, so the firepower control has to be careful.

Oblique insertion to create higher water temperature

If you use the upper pot to insert the pot obliquely to expose the gap for the hot gas to be discharged, keep heating until the spring beads bubble, that is, when the water temperature is a little higher, then straighten the upper pot and seal the upper and lower pot, at this time, the temperature of the extraction water pouring into the upper pot will be 2 ℃ ~ 5 ℃ higher than that of the direct insertion method, depending on the firepower.

Thermometer with firepower is the king.

Whether using direct or oblique insertion, cold water or hot water, when it comes to efficiency and accuracy, it is far less effective and effective than inserting a thermometer with firepower control.
